I met Blitz on a chat program called POWWOW, he has tons of great recipes, (I will be begging for more, I can tell you that now!)...He sent in this one for a great tasty, but simple salad.. Try it and let me know what you think!
2 cucs (cucumbers)
2 maters (tomatos)
1/4 red onion
juice of 1 lemon
1-2 tbs fresh chopped parsley
dash olive oil
Chop up maters and cucs...sliver onion (the turks press the onion in salt to remove bitterness...i never noticed a diff either way)...toss in a bowl with parsley...toss in lemon juice and olive oil...salt to taste. you can add some sliced pepperonccini if ya like....

Ingredients:
1 8 oz carton sour cream
1/4 cup brown sugar
1 lb seedless green grapes
Mix sour cream and brown sugar .......add grapes. Mix until grapes are coated. Cover & refrigerate 24 hours. Serve on lettuce leaves.

Ingredients:
1 box elbow macaroni, cooked & cooled
1/2 lb sharp cheddar cheese , cubed
1 green pepper, chopped
1 onion, chopped
mayonaise
mustard
salt & pepper
Mix first 4 ingredients. Add mayo, mustard and salt & pepper to taste. Serve well chilled.

Watergate (or Pistachio) Salad
Ingredients:
1 20 oz can crushed pineapple
1 pkg instant pistachio pudding
1 12 oz tub Cool Whip (more if desired)
1 pkg of mini marshmallows
Mix undrained pineapple and pudding mix. Fold in other ingredients.
Chill 12 hours before serving.
*note from me: This is a staple at our family gatherings..My mother-in-law makes this salad, although we eat it as a desert!..She also adds chopped pecans or walnuts, about 1/2 a cup, or to taste.*

Ingredients:
1 .75 oz pkg Italian dressing mix
1 1 lb bunch of broccoli
1/2 lb fresh mushrooms , sliced
1 cup diced swiss cheese
1 3 1/2 oz pkg of sliced pepperoni
1 green pepper, chopped
Prepare dressing and set aside. Wash broccoli and break into flowerets. Combine with next 4 ingredients in a large bowl. Pour dressing over salad and toss gently. Cover and refrigerate 8 hours or overnight.

Ingredients:
5 lbs of potatoes peeled, cubed, cooked and cooled
chopped dill pickle
mayonaise
yellow mustard
dijon mustard
sour cream
2 hard boiled eggs, chopped
Place potatoes in a large bowl, add other ingredients to taste. Garnish with eggs and some chopped parsely if desired.

Ingredients:
1 pkg of spaghetti , cooked and cooled
1 medium onion, chopped
1 tomato, chopped
1 medium cucumber, chopped
1 pkg of light Italian dressing
Mix all ingredients....Serve cold.

Mix together the vingegar, the seasoning packets, and the sugar. Whisk until sugar is dissolved. While whisking, add the oil, in a stream, until well blended.
When ready to serve, mix the broccoli and the dry ingredients together, then pour dressing over all.. Toss to coat.
For the Slaw:
1 package broccoli slaw,
(found in the packaged salad section of your market)
2 packages Oriental flavored Ramen noodles, crushed
1 cup sunflower seed meats
1 cup slivered almonds
1 bunch finely chopped green onions
For the Dressing:
3/4 cup oil of choice
1/3 cup white vinegar
2 seasoning packets from the ramen noodles
1/2 cup sugar
Wait until the last minute to mix this, as the noodles will get soggy.
