Ringo sent me this candy recipe that was his grandmothers...I cant wait to try it!!.......

Gramma Ringo's Fudge

2 cups sugar
2 tbsp Hershys cocoa
1/2 cup water
1 teaspoon vanilla
1/2 stick butter/margarine
2 heaping tbsps peanut butter

Combine sugar and cocoa powder. Blend well (all lumps gone). Add the water and mix well. Cook over med-high heat, stirring constantly, as it comes to a boil. Cook till soft-ball stage.(240 degrees on a candy thermometer or drop in cold water to test). Add vanilla, butter and peanut butter. Stir till smooth and well blended. Pour out on buttered plate to cool and harden.


Just recently Kari (see the Main Dish and Appetizer pages; She has sent me Many wonderful recipes) paged me on ICQ looking for a Rice Pudding recipe. I sent her this one. She prepared it, and it has earned her stamp of approvial..So I will add it here!

Traditional Rice Pudding

4 eggs
2 cups milk
1/2 cup sugar
1 Tablespoon melted butter
1 tsp vanilla
1/4 tsp salt
2 cups of cooked rice
1/2 cup raisins (if desired) (I sometimes use coconut instead)
1 tsp cinnamon
1/4 tsp nutmeg

Beat eggs and add milk, sugar, butter, vanilla and salt. Stir in rice and raisins (if desired). Pour into buttered baking dish. Sprinkle with cinnamon and nutmeg. Bake at 325 degrees for 35 minutes.


My best friend Glynda..*aint that cute...we share the same name* sent me this wonderful, easy dessert. It combines some of my kids favortie "food groups", mainly cool whip, grahmn crackers...and of course ..CHOCOLATE..

Chocolate Eclair Dessert

INGREDIENTS:

1 box graham crackers
2 boxes(small) instant vanilla pudding
1 cup powdered sugar
3 cups milk
1 8-oz. container cool whip
1 can light chocolate icing

Line bottom of a 9 by 13 inch pan with graham crackers (break crackers to fit the bottom of the pan, if needed). Mix pudding with 3 cups milk and the powdered sugar. Beat about 2 minutes, stir in cool whip and spread half the pudding mixture over the cracker layer. Make another layer of crackers, and pour remaining pudding mixture over the top. Top this layer with more crackers and spread chocolate icing over the whole thing!! Refrigerate for several hours before serving.

Soda Cracker Toffee

INGREDIENTS:
40 Soda Crackers
1 Cup butter (most insist on butter, not margarine)
1 Cup Brown Sugar
6-12 Ounces Chocolate Chips,depending on preference
1 Cup Chopped Nuts (optional)
(Roasted Honey Nuts are great with this recipe)

Preheat oven to 350 degrees. Line a jellyroll pan or cookie sheet with aluminum foil and spray with a non-stick vegetable/butter spray. Place soda acrackers on pan in a single layer.
Combine butter and brown sugar in a saucepan, bring to a boil and boil for 3 minutes. Pour mixture over crackers, spread evenly. Bake for 5 minutes. Crackers will float. Remove from oven and while warm sprinkle with chocolate chips, then spread evenly. Sprinkle with nuts if desired. Cut while warm.
Note: Returning the candy/crackers to the oven (which has been turned off) for 2-3 minutes after sprinkling with chocolate chips to melt the chocolate might be needed

Pink Perfection

INGREDIENTS:
1 can sweetened condensed milk
1 can cherry or strawberry pie filling
1 (8 oz) container of cool whip
1 small can drained pineapple
1/2 cup chopped nuts

Mix everything together and chill for at least an hour. Delicious & fast. Serves 12
