Serve cold or hot, I use it as an appetizer dip for chips.
Whats in it:
Jalapeno peppers (3/4 - 1 cup chopped fine) {a hint from me....if you dont like so much "heat" take the seeds out of the peppers!}
White or yellow onions (2 - 3 large chopped fine)
Green peppers (1 medium chopped fine)
Tomatoes (enough to total about 3 quarts with other vegetables, chopped coarse)
Garlic (fresh minced or powder)
Chicken bouillon powder
Red wine
How To Fix It:
Use 4-1/2 quart crock pot and food processor.
1.Wash all vegetables and chop as directed. Combine in crockpot.
2.Add some seasoning and a little wine.
3.Cook on low for 2 - 3 hours. Taste and adjust seasonings or add ingredients to your liking.
4.Continue cooking for 5 - 6 hours.
5.Cool and make final seasoning adjustment to taste. ( I like it hot so I may add more Jalapeno's)
How To Store It:
Keeps in refrig for several weeks or in the freezer.

Ingredients:
1/2 lb. sharp cheddar cheese
1/2 lb. of margarine
2 1/4 cups of flour
1/2 teaspoon dry mustard
powdered sugar and chopped pecans
Grind or grate cheese. Cream cheese & margarine together Add flour & dry mustard, mix well. Place in refridgerator to chill. Roll out 1/4 to 1/8 of an inch thick & cut into shapes...place pecans on top if desired Bake at 400 degress for 15 minutes Roll in or sprinkle with powered sugar if desired

Sausage Balls
(my absolute favorite at Christmas!!!!)
Ingredients:
1 lb hot country sausage
1/2 lb shredded sharp cheddar cheese
2 cups of Bisquick
Mix all 3 ingredients by hand thoroughly
Shape into small balls
Bake at 325 degrees until brown.
*note from me: I too, love these....and I add a bit of Italian seasoning!! *

Beef & Cheese Ball
(Another Christmas favorite in my family)
Ingredients:
2 8 oz. pckgs of cream cheese softened
1 small green pepper , chopped fine
1 small onion, chopped fine
1 large jar or 2 small jars chipped dried beef , rinsed and chopped
crushed pecans
Mix everything but nuts & form into 2 balls. Coat balls with nuts. Serve with crackers

Ingredients:
1 3 oz. pkg of cream cheese, softened
1/2 cup sour cream
1/4 cup strawberry preserves
1 teaspoon grated lemon rind
1 tablespoon lemon juice
1 strawberry fan (optional)
Beat cream cheese at medium speed until creamy. Add next 4 ingredients, mixing until light and fluffy. Spoon into serving dish and garnish with strawberry fan if desired. Serve with fresh fruit.

1 lb. Ground Beef
1 lb. Sausage Hot or Mild
1 8oz pkg Velveeta Cheese
1 8oz pkg Velveeta Mexican Cheese
1 can Cream of Mushroom soup
1 can Chilies and Tomatoes
Brown ground beef and sausage. Melt cheeses in crockpot. Once cheese is melted add meat, soup and chilies and tomatoes. Serve warm with tortilla chips. May be dipped or poured on chips. ENJOY!!

10 medium chiles de arbol
3 cloves garlic -- peeled
1 teaspoon ground cumin
1 cup tomato sauce
1 cup water
1 teaspoon salt
1 tablespoon vinegar
In a small skillet roast chilies over a medium heat, until chilies are slightly blackened. Put all ingredients in a blender, and process until smooth.

This is an old family favorite from Christmas's past that still gets taken to all sorts of parties.
2 packages (8 oz. each) cream cheese
1/2 can crushed pineapple (8 1/2 oz. well drained)
2 cups chopped pecans (divided use)
1/4 cup green peppers, diced
2 tablespoons onion, minced
1 teaspoon seasoned salt
Mix cheese, pineapple, 1 cup of pecans, green pepper, onion and seasoned salt in a bowl. Be sure that the pineapple is well drained. Roll ball in remaining pecans. Serve with crackers.

INGREDIENTS:
2 Packages oyster crackers - size desired is optional
1 T Dillweed
1 t garlic powder
1 t onion powder
1 Package Hidden Valley Original dry seasoning
1 t lemon pepper
1 1/2 Cups salad oil
(Can also add salted nuts, pretzels, sunflower seeds,
cheese nips or any other choice you might desire)
Mix all ingredients, EXCEPT CRACKERS.
Pour mixture over crackers.
Bake 1 hour at 200 degrees, stirring every 15 minutes.
Great recipe made in large batches and given in tall rubbermaid
containers
for gift giving.
