Here is a wonderful cake/bar recipe from Kathy... She says that this is her families FAVORITE dessert! I cant wait to try them myself!
BARS
1 package devil's food cake mix
1 (21 oz) can cherry fruit pie filling
1 teaspoon almond extract
2 eggs, beaten
FROSTING
1 cup sugar
1/3 cup milk
5 tablespoons margarine or butter
1 (6-oz) pkg. (1 cup) semi-sweet chocolate chips
Heat oven to 350 degrees F. Grease and flour 15x10x1-inch baking pan or 13x9-inch pan.
In large bowl, combine all bar ingredients; stir until well blended.
Spread in greased and floured pan.
Bake at 350 degrees F. until toothpick inserted in center comes out clean.
(For 15x10x1-inch pan, bake 20-30 minutes; for 13x9-inch pan, bake 25-30 minutes.)
In small saucepan, combine sugar, milk and margarine. Bring to a boil. Boil 1 minute, stirring constantly. Remove from heat; stir in chocolate chips until smooth. Pour and spread over warm bars. Cool 1 1/4 hours or until completely cooled. Cut into bars.

My sister-in-law Lisa makes this wonderful cake for my father-in-law's birthday EVERY year...It is a wonderful moist cake...Try it, I think it will become one of your family favorites too
4 cups peeled, cored and diced Rome apples
2 cups sugar
1 cup chopped nuts (she uses pecans, but walnuts would work too)
Mix the above ingredients together and let stand for at least 1 hour or overnight. Stir often. (you will find this makes a "syrup" which is all of the liquid used in the recipe)
3 cups flour
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
1 cup of vegetable oil
1 tsp. vanilla
2 eggs, beaten
Pre-heat oven to 350 degrees. Add the dry ingredients to the apple mixture. Then add the oil, vanilla and eggs. Mix BY HAND until combined. Pour into a greased and floured bundt pan, and bake for 1 hour and 15 minutes. This cake really needs no frosting, but if you want you can spinkle the top with powdered sugar.

This is a really nice refreshing cake..really moist and gets better as it gets older, if it lasts that long!
1....white cake mix (19 oz )
1...lemon instant pudding (4 serving size)
3/4 cup....cold water
3/4cup...vegetable oil
4 eggs
Preheat oven to 325 degrees. Grease and flour a 9x13 inch baking pan.
Place cake mix & pudding in a large bowl. Add water & oil. Beat for 2 minutes on medium speed.
Add the eggs... Beat 2 minutes longer. Pour batter into prepared pan. Bake for
50 minutes or until tests done.
While cake is baking, mix together..
2 cups powdered sugar
2 tbsp butter (melted)
1/3 cup orange juice
2 tbsp cold water
Take cake from oven, and immediately prick with fork all over. Drizzle icing over cake.

I can remember when I was little my sister chasing me around the house to get the cake away from me. I liked it soooo much I took the whole cake before mom had it iced. Ummmm it was good. hehehe
1 cup sugar
4 tbsps. butter
1/4 cup cocoa
1 egg
1 tsp. vanilla
1 tsp.baking powder
1 tsp.baking soda
1 1/4 cup flour
1 cup hot water, added last
Preheat oven to 350 degrees. Mix together all ingredients, and bake for 30 minutes. While cake is still warm, frost with 1 tbsp cocoa 2 tbsp milk > 2
tbsp. melted butter and 1 cup icing (powdered) sugar. Could anything be easier ?

My best friend in the whole world, (both on line and real life), loves to bake! This is Kelly's carrot cake recipe, and one of my personal favorites! (this is a hint now....somehow it tastes better when YOU make it, Kel!!)
1 1/2 cups sugar
1 cup vegetable oil
3 eggs
2 cups flour (all purpose)
1 1/2 tsps cinnamon
1 tsp baking soda
1 tsp vanilla
1/2 tsp salt
1/4 tsp nutmeg
3 cups grated carrots
1 cup chopped nuts
Preheat the oven to 350 degrees. Grease and flour two 8 or 9 inch round cake pans. Cream together the sugar, oil and eggs. Mix together the flour,spices, and baking soda. Add to the creamed mixture. Mix in the carrots and nuts. Pour into the prepared pans and bake at 25-30 minutes or until cakes test done. Cool in the pan for 10 minutes, and then turn out on wire racks to finish cooling.
Frosting:
8 oz cream cheese
1 tbsp milk
1 tsp vanilla
4 cups sifted powdered sugar
Combine all ingredients and beat on high until fluffy.

2 sticks of butter
3 cups sugar
1/2 cup Crisco shortening
3 cups flour
1 cup milk
5 eggs
1 tbsp vanilla
1/4 tsp salt
1/2 tsp baking powder
5 tbls cocoa
Preheat oven to 350 degrees. Cream butter, sugar and shortening. Add eggs. In a separate bowl mix together all the dry ingredients. Alternate mixing the milk and the dry ingredients into the creamed mixture. Add vanilla. Bake at 350 degrees for an hour and a half in 2 loaf pans or one tube pan.
Here is a cake recipe that I found while reading through old newspaper clippings.....Its more like a pudding, with a crust. Give it a try!

INGREDIENTS:
2 sticks margarine, melted
2 cups sugar
1 1/2 cup flour
1/4 tsp salt
1 tsp vanilla
1 1/2 cup chopped nuts
1/2 cup cocoa powder
1 small bag mini marshmallows
4 eggs, slightly beaten
Mix margarine and cocoa togheter, Stir in sugar and eggs. Mix well. Add remaining ingredients (EXCEPT MARSHMALLOWS). Mix well, and then put into a greased and floured 13 by 9 inch baking pan. Bake at 350 degrees, for 30 minutes...or until tests done. Remove from oven, sprinkle marshmallows over the cake, while cake is still warm, then top with frosting.. SEE BELOW
FROSTING:
1 box powdered sugar
1/2 cup cocoa
1/2 stick margarine, softened
1/2 cup milk
Combine all ingredients until well blended, and of spreading consistency.
