egg Eggs and Brunch egg

I met Marlene while my husband and I were stationed at Fort Polk, Louisiana. Almost as soon as we met, we were inseparable.. We both shared a love of crafting, gardening, and of course cooking!! (Luv ya Marlene!!) Here is one she just sent me for an Italian style omelette.

Italian Egg Pie

6 eggs
1 tbsp milk
3 tbsp flour
1/2 to 1 tsp of pre-mixed Italian seasoning, or the seasonings of your choice
1/4 cup grated Parmesan cheese
salt and pepper to taste
non-stick cooking spray
1 to 2 tbsps oil or butter for frying

Beat together the eggs and the milk. Add the flour and the seasonings. Beat with a whisk until well blended. Spray a large non-stick pan with the cooking spray. Heat the oil in the pan until hot. Pour the eggs in the skillet, and cook, lifting the edges carefully, and tilting the pan to allow the uncooked egg to run undernieth. Continue cooking until the bottom is golden browned. Now very carefully, using two spatulas, turn the "pie" over and brown the other side. Makes a wonderful brunch or light lunch, served with fresh fruit.
