"Egg McMuffin"
1 Each English Muffin
1/3 Cup Egg Beaters� 99% egg substitute
1 Slice Canadian Bacon
2 Tablespoons nonfat cheddar cheese, shredded
1 Tablespoon Nonfat cream cheese
Cook the egg substitute in a pan sprayed with cooking spray until done. (Cook it like an omelette and fold over as it gets cooked) Spread the Cream cheese on each side of the muffin. Add the egg, bacon and sprinkle with the cheddar cheese. Microwave on high for 30-50 seconds until the cheese is melted.

Oat Waffles
1 cup all-purpose flour
1 cup oat flour ( or 1 1/4 cups quick-cooking oats, processed in a blender or food processor until finely ground)
4 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
2 eggs
1-3/4 cups fat-free milk
2 tablespoons canola oil
1 teaspoon vanilla extract
In a bowl, combine the first five ingredients. Combine the eggs, milk, oil and vanilla; stir into dry ingredients just until combined. Pour batter by 1/2 cupfuls into a prehearted waffle iron; bake according to manufacturers directions until golden brown.
Yield: 8 waffles (about 6-1/2 inches)
