REALLY Impossible Cheeseburger Pie!
I converted the regular full-fat "Impossible Cheeseburger Pie" to a low-cal version using turkey and reduced fat Bisquick, etc, and came out with a DELICIOUS meal - even better than the regular one!! (You could make it even lower in calories by using skim milk and egg substitute.)
1/2 pound cooked ground turkey
1 cup cooked onions
1 cup bell pepper(s)
2 clove garlic clove(s)
4 oz Kraft 2% Shredded Mild Cheddar Cheese
1/2 cup Bisquick Reduced-Fat Baking Mix
2 large egg(s)
1 cup 2% Milk
1 tsp table salt
1 tsp black pepper
In medium skillet, saute onion, bell pepper and garlic cloves in Pam. When tender, add turkey and cook til turkey is cooked through. In a small casserole dish or pie plate, spray Pam to cover and add turkey mixture on bottom. Sprinkle cheese over top of mixture. In separate bowl, mix Bisquick with milk and stir until no longer lumpy. Beat eggs and add them to liquid mixture and stir. Pour liquid over meat and cheese and put in preheated 400 degree oven. Cook for about 25 mins or until knife inserted in center comes out clean.
I served this with instant mashed potatoes fixed with 2 2/3 c. dry potato flakes and a 14.5 oz can of chicken broth (instead of milk). Heat up the broth and add to the dry flakes. If it is too dry, add some water (also heated in the microwave to very hot). You can either squirt with I can't believe it's not butter spray or put a dollop of light margarine on top of each indiv. serving.

Chicken a la King Casserole
8 ounces uncooked wide egg noodles
1 can (10-3/4 oz) reduced fat reduced sodium condensed cream of chicken soup, undiluted
2/3 cup fat-free evaporated milk
6 oz. cubed reduced fat Velveeta
2 cups cubed cooked chicken breast
1 cup sliced celery
1/4 cup chopped green pepper
1 jar (2 oz) diced pimientos, drained
1/3 cup dry bread crumbs
1 tablespoon butter or stick margarine, melted
1/4 cup slivered almonds
Cook noodles according to package directions. Meanwhile, in a large saucepan, combine soup and milk. Cook and stir over medium heat for two minutes. Reduce heat; stir in cheese until melted. Add chicken, celery, green pepper and pimientos.
Drain noodles; add to chicken mixture and mix well. Transfer to a shallow 2-qt. baking dish coated with nonstick cooking spray. Cover and bake at 400 degrees for 20 minutes. Toss bread crumbs and butter; sprinkle over top. Sprinkle with almonds. Bake, uncovered, for 10-15 minutes or until heated through and golden.
