2 tbs. minced onion |

1/4 cup cream cheese |

1/4 cup processed swiss cheese spread ( I use Merkt's Swiss Almond cheese spread) |

1 cup grated cheddar |

1/8 tsp. lemon pepper |

1/8 tsp. dried cilantro |

1 tbs. sunflower seeds lightly roasted |

1 tbs. chopped almonds lightly roasted |
Place the sunflower seeds and the almonds on a baking sheet and bake in a 400 degree oven for 10 minutes or until they are lightly roasted. Keep a close eye on them because once they begin to roast they will burn quickly.
In a bowl combine the cream cheese, swiss, cheddar, lemon pepper, and cilantro. Mix together and form into a ball.
Place the roasted sunflower and almonds in a mortar and pestle or coffee grinder and grind until ground. Pour them onto a plate.
Roll the cheese into the ground nuts until it is completely covered.
Refrigerate for 30 minutes minimum.
