FRENCH FRIED ZUCCHINI
INGREDIENTS:
*Amounts of the coating for the zucchini will vary depending on how many you make.
*Flour
*Eggs
*Good Seasons Dry Italian Mix.
*Put each ingredient in separate bowls.                   *Cut zucchini in slices.            *Dip the zucchini in the flour first, then the egg, then the Good Seasons, ( dipping the zucchini into the flour first, helps the batter stick better). *Put the coated zucchini into french frier.                          *Fry until golden brown.
    BAKED CORN
INGREDIENTS:
*2 cans creamed corn
*1/2 green pepper, chopped
*1/3 cup onion, chopped
*1/3 cup celery, chopped
*1 tbsp. butter
DIRECTIONS:
*In a small casserole bowl, add the ingredients and bake at 350 degrees for 45 minutes.
GROOVY GREEN BEANS
INGREDIENTS:
*1 ( 15 oz.) cans green beans
*1 cube beef bouillon cubes
*1 tbsp. Worcestershire Sauce
*1 tsp soy sauce
*1 tbsp. butter
*1 pinch garlic pepper seasoning
DIRECTIONS:
*Drain the beans, reserving 1/2 of the liquid.                                    *Dissolve the bouillon cube in the reserved liquid in a saucepan. *Add worcestershire sauce, soy sauce, butter and garlic seasoning to taste.                     *Simmer for 15 minutes.      *Remove to a serving bowl, leaving beans sitting in the liquid.                                      *Use a slotted spoon to serve.
*Makes 6-8 servings
EGG PLANT PARMESAN
INGREDIENTS:
*3-4 large eggplants, sliced into 1-inch pieces
*1 cup flour
*4 eggs, beaten
*1 1/2 cup seasoned bread crumbs
*1 tsp ground oregano
*1 cup parmesan cheese, grated
*1 (32oz.) jar spagetti sauce
*2 cup mozzarella cheese, shredded
*1 (8oz.) pasta noodles, cooked to make about 4 cups.
*Salt and Pepper to taste
DIRECTIONS:
*Preheat oven to 350 degrees
*Dredge eggplant slices through flour and then beaten eggs.
*Combine breadcrumbs, parsley, oregano, parmesan cheese, salt, and pepper
*Dredge eggplant through breadcrumb mixture.
*Spray a large, shallow baking dish with non-stick cooking spray.      *Place eggplant slices in baking dish.
*Bake for 30 minutes at 350 degrees.
*Remove from oven and pour spagetti sauce over eggplant.
*Sprinkle with mozzerella cheese and bake an additional 10-15 minutes at 350 degrees.
*Serve over hot pasta.
RICE WITH FRESH HERBS
INGREDIENTS:
1 small onion, finely chopped
2 garlic cloves, minced
1/4 cup butter
2 cups uncooked rice (any type).
1 tbsp, marjoram, chopped
1 tsp. fresh thyme, chopped
1 tbsp. fresh parsley, chopped
1 tsp. fresh basil, chopped
4 cups chicken broth
DIRECTIONS:
Saute onions and garlic in butter, just until translucent.
Add rice and spices and cook for several minutes. Stir in chicken broth. Reduce heat, cover, and simmer for 30 minutes or until all broth is absorbed.
   BAKED CRANBERRY SAUCE
INGREDIENTS:
*4 cups cranberries
*2 cups white sugar
*1/3 cup brandy
DIRECTIONS:
*Preheat oven to 300 degrees.
In a 2-qt. baking dish, mix together the cranberries and sugar.                                     *Bake at 300 degrees for 1 hour, stirring often.
*Remove from oven and stir in brandy and transfer to serving dish.
*Makes 8 servings.
     HUSH PUPPIES
INGREDIENTS:
*2 qt. vegetable oil for frying
*3 cups cornmeal
*2 tsp baking powder
*1 1/2 tsp salt
*1 1/2 cups milk
*1 egg, beaten
*1 small onion, minced
DIRECTIONS:
*In a deep fryer, heat vegetable oil to 365 degrees.
*In a large mixing bowl, combine all other ingredients and blend well.
*Shape the batter into small balls, approximately 1 tbsp. each.
*Use a long handled sppon to gently slide them into the oil
*Cook the hushpupies, 8-10 at a time, until brown.
*Remove from the oil with a slotted spoon and roll on paper towels to briefly drain

REGINA'S SAUSAGE-CHEESE BALLS TEXAS STYLE
INGREDIENTS:
*3 cup biscuit mix
*1 lb. uncooked sausage
*16 oz. shredded pepper jack cheese
*1 cup frozen chopped spinach
*1/2 cup parmesan cheese
*1 tsp crushed rosemary
*1 tsp minced garlic
*1/4 cup finely chopped onions
*1 jalapeno pepper, finely chopped
*enough milk to make mixture moist but not wet
DIRECTIONS:
*Mix all ingredients well
*Roll into 1-inch balls and place on baking pan
*Cook at 350 degrees until golden brown

            SUSANS CORN CASSEROLE
INGREDIENTS:
*1 16-oz. can whole kernel corn
*1 16-oz. can cream style corn
*1 8-oz. carton sour cream
*1 box Jiffy Corn Bread Mix
*1 stick butter or margarine, melted
*2 Tbsp. sugar
DIRECTIONS:
Mix all ingredients together.
Pour Into an ungreased 9x9-inch or larger glass casserole and bake at 350 degrees for 50-60 minutes or until golden brown and firm in the center.

RECIPE FROM SUSAN S.- INDIANA
ASPARAGUS WITH MUSTARD SAUCE
INGREDIENTS:
*2 lbs fresh asparagus
*1 cup sour cream
*1 tsp dry mustard
*2 tbsp Dijon or Honey Mustard
*1 tbsp red wine vinegar
*2 tbsp melted butter
*1 tsp sugar
* salt and pepper to taste
DIRECTIONS:
*Blanch asparagus in a small amount of water until crisp and tender
*Meanwhile, combine remaining ingredients in a saucepan and heat through
*Pour over asparagus
                   SCALLOPED CORN
INGREDIENTS:
*1-10 oz. can creamed corn
*1- 10 oz. can milk
*1 sleeve Saltine crackers, crushed
*1 egg
*salt and pepper to taste
DIRECTIONS:
*Mix all ingredients together and pour into a greased 1 1/2 quart casserole dish.
*Bake for 1 hour a 350 degrees.

    CREAM CHEESE WRAPS
INGREDIENTS:
*1 lb ground beef
*1 pkg. taco seasoning
*12-16 oz. cream cheese
*8 oz. salsa or taco sauce
*flour tortillas
DIRECTIONS:
*Brown ground beef and drain
*Add seasoning mix according to directions on package
*Soften cream cheese
*In bowl, stir  ground beef, cream cheese, and salsa/taco sauce until well mixed
*Spread mixture thickly over flour tortilla
*Roll it up
*Repeat until all tortillas have been used or mixture runs out
*May be served whole or sliced into bite-size pieces and served with toothpicks

   CREAMY MACARONI AND CHEESE
INGREDIENTS:
*2qts. water
*1 tsp salt
*8 oz. elbow macaroni
*16 oz. shredded cheddar or Jarlsberg cheese
*8 oz sour cream
*1 cup mayonnaise
*2 tbsp chopped onion
*1 cup cheese crackers, crushed
DIRECTIONS:
*Bring water and salt to a boil in a large pot: stir in macaroni
*Return to a rapid boil, cook 8-10 minutes or until tender
*Drain and rinse with cold water
*Combine macaroni, cheese, sour cream, mayonnaise, and onion
*Spoon into a lightly greased large baking dish
*Sprinkle with crushed crackers
*Bake at 325 degrees for 30 -35 minutes
