| CINNABON ROLLS INGREDIENTS: *1/2 cup warm water *2 pkgs. dry yeast *2 tbsp. sugar *3 1/2oz. pkg. instant vanilla pudding mix *1/2 cup margarine, melted *2 eggs *1 tsp. salt *6 cups flour CREAM CHEESE FROSTING *8 oz. cream cheese *1/2 cup margarine *1 tsp. vanilla *3 cups confectioners sugar *1 tbsp. milk DIRECTIONS: *In a small bowl, combine water, yeast, and sugar. *Stir until dissolved. *Set aside. *In a large bowl, take pudding mix and prepare according to the directions. *Add margarine, eggs and salt and mix well. *Add yeast mixture. Blend. *Gradually, add flour and knead until smooth. *Place in a large greased bowl. *Cover and let rise until doubled. *Punch down dough and let rise again. *Roll out on a floured board to 34x21-inch size. *Take one cup soft butter and spread over surface. *In small bowl mix 2 cups brown sugar and 4 tsp. cinnamon. *Sprinkle over top. *Roll up very tightly. *With knife, put a notch every 2 inches. *Cut with thread or knife. *Place on a lightly greased cookie sheet 2 inches apart. *Take hand and lightly press down on each roll. *Cover and let rise until doubled again. *Bake at 350 degrees for 15-20 minutes. *Take out when they start to turn golden brown. *DO NOT OVERBAKE. *Frost warm rolls with cream cheese frosting. | WALNUT CINNIMON SWIRL BREAD INGREDIENTS: *1 cup milk, room temperature *1 egg, beaten *2 tbsp. butter softened *1 1/2 tsp. salt *3 tbsp. white sugar *3 cups bread flour *2 tsp. bread machine yeast FILLING: *3 tbsp. butter, melted *2/3 cup brown sugar *3/4 tsp. ground cinnamon *1 cup chopped walnuts *1 cup raisins TOPPING: *1 egg, beaten *1 tbsp. water *1/2 cup chopped walnuts DIRECTIONS *Place milk, one egg, two tbsp. butter, salt, 3 tbsp. sugar, flour, and yeast in bread machine pan. *Select dough cycle, press start. *When cycle is complete, remove dough from machine. *Punch down and rest for 5 minutes. *Roll out on lightly floured board into an approximately 24x10 inch rectangle. *Brush the dough with 3 tbsp. melted butter, then sprinkle with brown sugar, cinnamon, 1 cup nuts, and raisins. *Roll up tightly, jelly-roll style, from the longer side. *Place on a greased baking sheet, shape into a ring, and seal ends. *Mist with warm water, cover with plastic wrap which has also been misted with water, and let rise in a warm place until double in size, approximately 1 hour. *Preheat oven to 375 degrees. In a small bowl, beat together 1 egg and 1 tbsp. water: set aside. *Just before baking, brush dough with egg mixture and sprinkle with remaining 1/2 cup walnuts. *Bake in preheated oven for 20-25 minutes. *This is a dense ring, and if it browns too quickly, just cover with foil and continue to bake. *Makes 1 large loaf. |
| APPLE CRANBERRY CRISP INGREDIENTS: *1 1/2 cups quick cooking oats *1/2 cup brown sugar *1/2 cups all-purpose flour *1 tsp. ground cinnamon *1/3 cup butter flavored shortening, melted *1 tbsp. water *1 (16oz.) can whole cranberry sauce *2 tbsp. cornstarch *5 granny smith apples, peeled, cored, and sliced DIRECTIONS: *Preheat oven to 375 degrees *In a medium bowl, mix together the oats, brown sugar, flour, and cinnamon. *Stir in the butter flavored shortening and water to form a crumbly mixture. *In a medium saucepan over medium-high heat, mix together the cranberry sauce and cornstarch and bring to a boil. *Stir in the apples and coat with the cranberry sauce. *Spread the mixture into an 8x8-inch glass baking dish. *Crumble the oat mixture over the apples. *Bake in the preheated oven for 30 minutes, or until the apples are tender. *Serve warm. *Makes 12 servings. |
| PUMPKIN COOKIES INGREDIENTS: *2 cups all-purpose flour *1 1/3 cups quick cooking oats *1 tsp. baking soda *1 tsp. ground cinnamon *1/2 tsp. salt *1 cup(2 sticks) butter or margarine *1 cup packed brown sugar *1 cup granulated sugar *1 cup Libbys Pure Pumpkin *1 large egg *1 tsp. vanilla extract *3/4 cup chopped walnuts *3/4 cup raisins *Decorating icings, Nestle *Toll House semi-sweet chocolate morsels, candies, *raisins or nuts. DIRECTIONS: *Preheat oven to 350 degrees *Grease baking sheets *Combine flour, oats, baking soda, cinnamon, and salt in medium bowl. *Beat butter, granulated and brown sugar in large mixer bowl until light and fluffy. *Add pumpkin, egg, and vanilla extract; mix well. *Add flour mixture and mix well. *Stir in nuts and raisins. *Drop 1/4 cup dough onto prepared baking sheet; spread into 3 inch circle or oval. *Repeat with remaining dough. *Bake for 14-16 minutes or until cookies are firm and lightly browned. *Cool on baking sheets for 2 minutes; remove to wire rack to cool completely. *Decorate as desired with icing, morsels, candies, or raisins and nuts. *Makes 20 large cookies. |
| ORANGE RUM CAKE INGREDIENTS: *1 cup butter, softened *1 1/2 cups sugar *2 1/3 cups all-purpose flour *3 eggs *1 tsp. vanilla *1/2 tsp. salt *1 tsp. baking powder *1 tbsp. orange zest, grated *1/2 cup orange juice *1/4 cup rum DIRECTIONS: *Preheat oven to 350 degrees *Cream together butter and sugar. *Add remaining ingredients and mix well. *Grease and flour tube pan. *Pour batter into pan and bake for 45-50 minutes. *NOTE: If you prefer not to use rum, increase orange juice to 1/2 cup and use 1 tsp. of rum extractl |
| APPLE BANANA SMOOTHIE INGREDIENTS: *1 frozen banana, peeled and chopped *1/2 cup orange juice *1 gala apple, peeled, cored, and chopped *1/4 cup milk DIRECTIONS: *In a blender, combine frozen banana, orange juice, apple, and milk. *Blend until smooth. *Pour into glasses and serve. *Makes 2 servings. |
| JT'S COOKIE SALAD INGREDIENTS: *2 (3.4oz.) packages instant vanilla pudding mix *2 cups buttermilk *12oz. frozen whipped topping, thawed *1 (20oz.) can pineapple chunks, drained *2(11oz.) cans mandarin oranges, drained *1/2 (11.5oz.) package fudge striped cookies DIRECTIONS: *In a large bowl, mix together the pudding mix and the buttermilk. *Fold in the whipped topping. *Mix in the pineapple chunks and mandarine oranges. *Chill until ready to serve. *Crush cookies and mix in just before serving. *Makes 6 servings. |
| ICE CREAM SANDWICHES INGREDIENTS: *1 (18.5oz.) package chocolate cake mix *1 qt. mint chocolate chip ice cream, softened DIRECTIONS: *Preheat oven to 350 degrees. *Grease a cookie sheet *Mix cake mix according to package directions, omitting the eggs. *Drop by large spoonfuls onto cookie sheet; Mixture should be about the consistancy of brownie batter. *Bake 15 minutes in the preheated oven, or until cookies spring back when touched lightly in center. *Cool completely. *Put a scoop of softened ice cream in the center of the cookie. *Top with a similarly-sized cookie, and wrap in plastic wrap. *Gently press down to flatten out ice cream scoop. *Freeze until serving. |
| HERSHEY KISSES,REESES PEANUT BUTTER SUNDAE INGREDIENTS: *16 Hershey Kisses *1/4 cup water *1/2 cup Reeses Creamy Peanut Butter *1/4 cup light corn syrup *1/4 tsp. vanilla extract *8 scoops vanilla ice cream *Whipped cream *Additional hershey kisses DIRECTIONS: *Remove wrappers from chocolate pieces. *Chop chocolate pieces into quarters. *In small bowl, using a whisk, gradually stir water into peanut butter until smooth. *Spoon peanut butter sauce and chocolate pieces over individual servings of ice cream. *Garnish with whipped cream and additional chocolate pieces. *Serve immediately. *Makes 6-8 servings. |
| STRAWBERRY PARFAITS INGREDIENTS: *2-3 pints fresh strawberries, washed, hulled, and sliced *16 oz. vanilla yogurt *8 oz. cream cheese, softened *2 tbsp. lemon juice *whipped topping *6-8 parfait glasses or other clear glasses. DIRECTIONS: *Combine yogurt, cream cheese, and lemon juice and mix well. *Place about 1/4 cup of mixture at the bottom of each parfait glass followed by strawberries and more yogurt mixture. *Finish with strawberries and top with whipped topping. |
| BANANA SPLIT ICE CREAM INGREDIENTS: *2 cups white sugar *3 tbsp. all-purpose flour *1/2 tsp. salt *1 qt. milk *1 (12 fluid oz.) can evaporated milk *6 eggs, beaten *1 tbsp. vanilla extract *1 qt. chocolate milk *2 (10 oz.) pkgs. frozen strawberries, thawed *3 bananas, peeled and diced *1 (15 oz.) can crushed pineapple, with juice DIRECTIONS: *In a heavy saucepan over medium heat, combine sugar, glour, salt, milk, and evaporated milk. Cook, stirring until bubbles form at the edges and mixture is slightly thickened. *Pour a small amount of hot milk into the beaten eggs, stirring to combine. *Remove milk mixture from heat and stir the eggs into the milk until fully incorporated. *Stir in vanilla, chocolate milk, strawberries, bananas, and pineapple with its juices. *Pour into the freezer cannister of an ice cream maker, adding milk as needed to bring to fill line. *Chill in refridgerator until cold, then freeze according to the manufacturers instructions. *Makes 4 quarts. |
| GRILLED GARLIC BREAD INGREDIENTS: *1 cup mayonnaise *6 cloves garlic, peeled and minced *3/4 cup grated parmesan cheese *1/2 cup shredded cheddar cheese *1 tbsp. half and half *1/4 tsp.. paprika *1 (1 lb.) loaf french bread, halved lengthwise DIRECTIONS: *Preheat grill for high heat and lightly oil grate. *Preheat oven to 350 degrees. *In a medium size bowl, mix mayonnaise, garlic and parmesan cheese. *In a medium saucepan over medium low heat, mix the cheddar cheese, half and half, and paprika. *Stir constantly until melted and well blended. *Pour into the bowl with mayonnaise mixture. *Throroughly mix together. *Place french bread in the preheated oven. *Heat until lightly toasted, about 5 minutes. *Remove french bread from oven. *Spread with the blended mixture. *Wrap tightly in foil. *Place on the preheated grill and cook 15 minutes, or until the mixture is warm and bubbly. *Makes 1 loaf. |
| PUMPKIN ROLL INGREDIENTS: *3 eggs *1 cup sugar *2/3 cup canned pumpkin *1 tsp. baking soda *1 tsp. cinnamon *1/2 tsp. nutmeg *3/4 cup flour FILLING *1 (8 oz.) package cream cheese, softened *4 tbsp. butter, softened *1 cup powdered sugar *1 tsp. vanilla DIRECTIONS: *In a large bowl, beat eggs and sugar. Beat in remaining cake ingredients. *Grease a 10x15 jelly roll pan. Line pan with waxed paper, then grease and lightly flour the waxed paper. *Pour batter into the pan and spread evenly. Bake at 350 degrees for 15 minutes. Cake cooks fast fo watch carefully to avoid burning the edges. *While cake is baking, sprinkle powdered sugar heavily over the kitchen towel, using a sieve or sifter. *Turn hot cake onto the towel. *Remove waxed paper. Trim off burnt or crusty edges. *Sprinkle more powdered sugar over the hot cake and quickly roll up with towel inside. Let cake cool completely, about 30 minutes. *Meanwhile, prepare filling by beating together all ingredients until smooth and creamy. *Unroll cooled cake and spread with the filling mixture. Roll up cake with filling on the inside. *Wrap in waxed paper and then foil. *Refridgerate or freeze. To serve, slice cake about 1/3 inch thick and sprinkle with powdered sugar. *NOTE: Cake cuts best when still slightly frozen. |

| JOY'S APPLE CAKE INGREDIENTS: *3 tbsp. softened butter *1 cup sugar *1 beaten egg *1 cup sifted flour *1/2 tsp. each cinnamon, nutmeg, salt *1 tsp. baking soda *3 cup diced peeled apples *1/4 cup chopped nuts(Optional) *1 tsp. vanilla *Whipped cream or ice cream DIRECTIONS: *Cream butter, sugar, and egg. *Stir in dry ingredients (batter will be thick.) *Stir in apples, nuts and vanilla *Spread in 8" greased baking pan. *Bake in a 350 degree oven for 35-40 minutes, until tests done. *Serve warm or cold with whipped cream or ice cream. *Makes 9 servings. | ALICE'S BEST CUSTARD PIE INGREDIENTS *1 9-in. pie shell *2 1/2 cup milk *1//2 cup sugar * 4 eggs beaten * 1 tsp. vanilla DIRECTIONS: *In a medium-sized mixing bowl, mix the sugar, eggs, and valilla together *Scald the milk. Make sure it is just barely warm, then add the sugar, eggs, and vanilla. *Pour into pie shell and bake until custard is firm to touch, approximately 35 minutes. *Different ovens require different times, and the custard is touchy so you just have to make sure the oven is not too hot and test the custard with your fingers. | PATTI'S QUICK & EASY CHEESECAKE INGREDIENTS: *1 extra-serving size, prepared graham cracker pie crust * 1 7.2 oz. box vanilla flavored powdered frosting *2- 8-oz. pkgs cream cheese, softened * 1 1/2 cup dairy sour cream * 1 20-oz. can of your favorite fruit pie filling DIRECTIONS: * Preheat oven to 350 degrees * Prepare frosting according to package directions (using water). If the directions call for butter, omit it. * In a large bowl, with an electric mixer, beat cream cheese and sour cream together until very smooth. * Beat in the prepared frosting, making sure to mix thoroughly. * Pour mixture into the ready-made crust. * Bake at 350 degrees for 1 hour, until well set * Cool completely at room temperature on a wire rack. * When completely cool, refidgerate for 8 hours or overnight ( the longer the better). * Top with your favorite pie filling and refidgerate for an additional 1 to 2 hours, until topping is set. | BANANA NUT BREAD INGREDIENTS: *2 cups sugar *1 cup vegetable oil *4 eggs *2 1/2 cups flour *2 tsp baking soda *1 tsp salt *3 cups bananas, mashed *1 cup walnuts DIRECTIONS: *Mix all ingredients together in the order listed. *Grease two loaf pans with oil *Set oven to 250 degrees and let batter sit in pans until oven has reached 250 degrees *Place pans on lower rack for one hour. *Turn heat to 300 degrees and bake 15 more minutes. *Remove pans from bottom rack and place on top rack for 15-30 minutes more, until done. *Makes 2 loaves. |
| SUZANNE'S BLACKBERRY WINE CAKE INGREDIENTS: 1(18.25oz.) package white cake mix 1(3-oz.) package blackberry gelatin 4 eggs 1/2 cup vegetable oil 1 1/2 cups blackberry wine 1/2 cup chopped pecans 1 cup confectioners sugar 1/2 cup butter, softened blackberry wine glaze DIRECTIONS: *Preheat oven to 325 degrees *Grease and flour on 9 or 10 inch tube pan *Put chopped pecans in bottom of pan *Combine the cake mix, blackberry gelatin, eggs, oil, and 1 cup blackberry wine. *Beat for 2 minutes, then pour batter over top of pecans *Bake at 325 degrees for 40-45 minutes, or until cake tests done *Pour 1/2 of blackberry wine glaze over top of cake while still warm *Let set for 10 minutes then remove cake from pan *Allow cake to cool bully before pouring the remaining glaze on top BLACKBERRY WINE GLAZE *Mix together the confectioners sugar, 1/2 cup blackberry wine, and the softened butter or margarine *Beat until smooth. Sift in flour and baking soda. *Drop by rounded teaspoonfuls onto ungreased cookie sheet *Bake at 375 degrees for 8 to 10 minutes or until set *Cool slightly. | APPLE BISCUIT ROUND INGREDIENTS: *2 cups all-purpose flour *2 tsp baking powder *1/2 cup butter, chilled *2 apples *1/2 cup sugar *1/3 cup raisins *1 egg, beaten *1 tbsp. brown sugar DIRECTIONS: *Grease an 8-inch round cake pan. *Sift flour and baking powder together in a bowl *Cut in butter until mixture resembles bread crumbs *Peel and core apples. *Dice and stir into flour and butter mixture with sugar and golden raisins *Stir in beaten egg to form a soft dough *Press mixture into pie pan and sprinkle brown sugar on top. *Bake 40-50 minutes at 350 degrees until risen and golden brown *Turn out onto a wire rack and leave until just warm. *Cut in half horizontally and spread bottom with butter and replace top. | STRAWBERRY SHORTCUT CAKE INGREDIENTS: *1-1/2 cups mini marshmallows *2 cups (two 10-oz packages) frozen sliced strawberries, thawed 1- 3oz. package strawberry Jello *1 tsp vanilla *2-1/4 cups flour *1-1/2 cups sugar *3 tsp baking powder *1/2 cups shortening *1/2 tsp salt *1 cup milk *3 eggs DIRECTIONS: *Grease a 9x13 inch pan *Sprinkle marshmallows evenly over bottom of pan *Thoroughly combine thawed strawberries with dry Jell-o and set aside *In a large bowl, combine the remaining ingredients. *Blend at low speed until moistened. *Beat 3 minutes at medium speed scraping sides often *Spoon strawberry mixture evenly over batter *Bake at 350 degrees for 45-50 minutes and serve warm or cool.
