SALADS
CUCUMBERS WITH SOUR    CREAM
INGREDIENTS:
* 3 large cucumbers
* 4 tbsp sour cream
* 1/2 tsp. miracle whip salad     dressing
* 1 pkg. Good Seasons Italian   Dressing
DIRECTIONS:
* Mix all ingredients and    refigerate and serve chilled.

TUNA STUFFED CHERRY TOMATOES
INGREDIENTS:
*1 pint cherry tomatoes
*8oz. cream cheese, softened
*1 6oz, can solid white tuna, drained
*2 tbsp. minced onion
*1/4 tsp seasoned salt
*pepper to taste
*Paprika
DIRECTIONS:
* Gently slice off the very top of each tomato.
* Scoop out plp and discard it.
* Combine cream cheese, tuna, onion, seasoned salt, and pepper and mix well.
* Place a small amount of mixture in each tomato shell and sprinkle with paprika.
CUCUMBER, TOMATO, & ONION SALAD
INGREDIENTS:
* 2-3 large cucumber, peeled and cut into 1-inch cubes
* 2 tomatoes, chopped
* 1/4 cup white onion, diced
* 1/4 cup fresh cilantro, chopped
* 1/4 cup lemon juice
* 1/4 tsp ground cumin
* 1/4 tsp ground coriander
* 1 tbsp. olive oil
* 1 tbsp fresh ginger, grated
* 1/2 tsp salt
* 2 fresh hot chili peppers, seeded and diced
DIRECTIONS:
*Place cucumbers, tomatoes, onion, and cilantro on a platter and toss.
*Combine remaining ingredients in a cruet and shake well.
*Pour over salad and toss.
*Chill for about 1 hour before serving.
SMOKED HAM & CHEESE SPREAD
INGREDIENTS:
* 1/2 lb. smoked ham, minced
* 1 cup cheddar cheese, shredded
* 1 tbsp fresh dill, chopped
* 1 tsp Worcestershire Sauce
* 2/3 cup mayonnaise
DIRECTIONS:
*Combine all ingredients together and mix well.
* Serve with crackers.
COLLEEN'S BROCCOLI-CAULIFLOWER SALAD
INGREDIENTS:
*1 cup broccoli florets
*1 cup cauliflower florets
*2 cups hard-broiled eggs, diced
*1 cup shredded Cheddar cheese
*6 slices bacon
*1 cup mayonnaise
*1/2 cup white sugar
*2 tbsp. white wine vinegar
DIRECTIONS:
*Place bacon in a large, deep skillet
*Cook over medium high heat until evenly brown
*Crumble and set aside
*In a medium-sized salad bowl, layer, in order, the broccoli, cauliflower, eggs, cheese, and bacon
*Prepare the dressing by shisking together the mayonnaise, sugar, and vinegar
*Drizzle dressing over top and serve
COUNTRY SALAD WITH HERB  VINAIGRETTE
INGREDIENTS:
1 head romaine lettuce, washed and gently torn into bite-sized pieces
*2 cucumbers, sliced
*1 yellow pepper, sliced
*1/2 cup black olives
*2 ripe tomatoes, diced
*1/2 cup crumbled feta cheese
VINAIGRETTE:
*1/2 cup olive oil
*`1/2 cup red wine vinegar
*1 clove garlic, minced
*1/2 tsp dried basil
*1 tsp dried parsley
]*1/2 tsp dried tarragon
*1/2 tsp dried chives
salt and pepper to taste
DIRECTIONS:
*Combine salad ingredients in a large bowl and toss.
*Combine vinaigrette ingredients in a cruet and shake well
*Just before serving, pour vinaigrette over salad, toss, and serve
COLE SLAW
INGREDIENTS:
*4 cups shredded green cabbage
*1 shredded carrot
*1/2 cup mayonnaise
*1/2 cup sugar
1/4 cup red wine vinegar
t tsp celery seed
salt and pepper, to taste
DIRECTIONS:
*Combine all ingredients and blend well
*Chill for at least 1 hour before serving.
SALAD
INGREDIENTS
*1-2 cloves garlic
*2 large head Romaine lettuce, torn into bite sized pieces
*1 cup croutons
*1/4 cup anchovies, diced, (optional)
*freshly grated parmesan cheese
DRESSING
*1/2 cup extra virgin olive oil
*1/4 cup red wine vinegar
*1 tsp Dijon mustard
*1 egg yolk, mashed
*2 oz. Blue Cheese or Roquefort, mashed
*salt and pepper to taste
DIRECTIONS:
*Rub the inside of a large salad bowl with the garlic cloves and discard cloves
*Combine salad ingredients together and place in the bowl.
*Slice marinated and cooked chicken and place over salad
*Combine dressing ingredients and shake well
*Pour over salad and toss.,
GRILLED CHICKEN CAESAR SALAD
INGREDIENTS:
*1 cup olive oil
*1/4 cup lemon juice
*2 cloves garlic, minced
*1 tsp oregano
1/2 tsp marjoram
salt and pepper to taste
*4 boneless chicken breasts
DIRECTIONS:
*Combine all ingredients except chicken together and mix well to created marinade
*Place chicken in a large baking dish and place marinade over chicken
*Marinate in the fridge for several hours
*When chicken has marinated for a sufficient time, place on a hot grill  for 7-10 minutes per side until juices run clear
*Place chicken on a platter to cool
SHRIMP COCKTAIL
INGREDIENTS:
*1 cup catsup
*juice of two limes
*1 small onion, chopped
*1/2 cup fresh cilantro, chopped
*t tsp hot sauce
*1 clove garlic, minced
*2 lbs large shrimp, cooked and chilled
*1/2 head iceberg lettuce
6-8 parfait glasses
lemon slices
DIRECTIONS:
*Combine first 6 ingredients and mix well
*Arrange a few lettuce leaves around the inside of each parfait glass
*Hang six to eight shrimp around the side of each glass with the large end of the shrimp in the glass and the tail end hanging over the edge
*Spoon about 2 tbsp. of the sauce into the middle of each glass
*Garnish with a lemon slice
*Note: For extra zing, add some prepared horseradish to the sauce
   BROCCOLI-CAULIFLOWER SALAD
INGREDIENTS:
*1 head broccoli
*1 head cauliflower
*1 red onion
*1 lb. bacon
*1 cup mayonnaise
*1 cup sugar
*8 oz. mozzarella cheese, shredded
DIRECTIONS:
*Fry bacon until very cooked and drain from grease
*Crumble bacon
*Chop broccoli and cauliflower and dice onion
*Mix broccoli, cauliflower, bacon, onion, and cheese together
*In a separate bowl, mix mayonnaise and sugar together
*Pour over salad and mix
*Refigerate for one hour and stir again

  CREAMY GARLIC SALAD DRESSING
INGREDIENTS:
*2 cups sour cream
*1 cup mayonnaise
*1 tsp steak sauce
*3/4 tsp lemon juice
*3/4 tsp white wine vinegar
*1 tsp monosodium glutamate (MSG)
*2 tsp garlic powder
*1 tsp mustard seed
DIRECTIONS:
*Whisk together all ingredients
*Refrigerate until chilled
*Makes 3 cups

  CHICKEN WALDORF SALAD
INGREDIENTS:
*1 can chicken breast
*1/4 cup sliced grapes
*1/4 cup chopped apple
*1/2 cup chopped walnuts
*1/2 cup mayonnaise
*1 capful (about 1 tsp) of lemon juice
DIRECTIONS:
*Mix all ingredients together and refigerate
*Makes 2-3 sandwiches or is great on crackers

CAULIFLOWER CASSEROLE
INGREDIENTS
*2 heads cauliflower
*1/2 stick butter
*4 stalks celery
*1 large onion
*1/4 lb Velvetta Cheese, grated
*soy sauce to taste (optional)
*8 thin pork chops
DIRECTIONS:
*Wash and slice cauliflower
*Chop celery and onion
*cook with cauliflower until tender
*Cut pork chops into bite-sisze pieces
*Brown in butter, cooking slowly until done
*Add pork to vegetables and simmer for about 20 minutes
*Sprinkle cheese or soy sauce over top
*Makes 8 servings

BEER BATTERED VEGGIES
INGREDIENTS:
*2 cups all-purpose flour
*1 1/2 cups beer
*2 eggs
*1 cup milk
*2 cups vegetable oil for frying
*salt and pepper to taste
*broccoli or cauliflower florets
*Carrot, cut into thick strips
*Onions, sliced into rings
*Fresh mushrooms, stems removed
*Green bell peppers, sliced in rings
*Any veggies you like, cut into bite sizes
DIRECTIONS
*In a medium bowl, mix together 1-1/2 cup flour and beer with a wooden spoon
*Let stand for at least 3 hours at room temperature
*Mix eggs and milk in a small bowl
*In a separate bowl, mix together 1/2 cup flour and salt and pepper
*Heat oil to 375 degrees
*Dip each vegetable in the egg and milk mixture into the flour and seasoning mixture, finally dip the vegetable in the beer and flour mixture
*Place the vegetables into the oil and fry until golden brown

INGREDIENTS:
*1/2 cup sugar
*1 tbsp flour
*1 cup pineapple  juice
*1 beaten egg
*1 tbsp butter
*8oz. Cool Whip
DIRECTIONS:
*Stir sugar and flour together
*Add pineapple juice, egg, and butter
*Stir over medium heat until well blended
*Remove from heat and let set to cool
*Add the Cool Whip
*Perfect for dipping apples, pears, peaches, or any other fruit
