POTATOES
GRILLED POTATOES AND VEGGIES
INGREDIENTS:

*The amount of ingredients you use depends on how many packets you wish to make.
*Potatoes
*Green Peppers
*Carrots
*Mushrooms
*Squash
*Onions
*Cherry Tomatoes
*Butter
Directions:
*Cut up the potatoes and veggies and place them on foil sprayed with pam.
*Salt and pepper or garlic powder to flavor.
*Wrap the potatoes and veggies into foil packets and place on grill for about 45 minutes or till potatoes are tender on medium heat.
FRIED MASHED POTATOES
This is just a little thing I threw together when I had some leftover mashed potatoes. Make them into patties and place in a frying pan with a little oil. Not alot because they will not brown. Works best with a teflon pan. Keep on medium. Let one side brown and then flip and let the other side brown.
SCALLOPED POTATOES
INGREDIENTS:
*8 large potates, peeled
*1 small onion, chopped
*1 small green pepper,        chopped
*1 pkg. ham chunks
*Milk
*Butter
*Flour
DIRECTIONS:
*Using a grater, (use the slicing side), grate the potatoes thin.
*In a casserole dish, put a layer of potatoes, onions, green pepper, and ham.     *After each layer add 1 tbsp. butter and sprinkly flour on top of each layer.              *Continue to make layers until dish is full.                 *Add milk until it almost covers the potatoes.
*Bake for 45 minutes or until potatoes are tender.
*Bake at 350 degrees.
HINT: If you are making french fries from scratch, they will be less soggy if you precook them till they are half way done, then refrigerate them until you are ready to eat. Stick them back in the fryer at high temp.

BARBARA'S PARTY POTATOES
INGREDIENTS:
*24 oz. frozen hash brown potatoes (cubes, not shredded).
*1 stick of margarine or butter
*1 small onion chopped
*16 oz. sour cream
*1 can cream of chicken soup
*1 cup grated cheddar cheese
*Potato chips, crumbled.
DIRECTIONS:
*Melt margarine in large pan.
*Mix the rest of ingredients in pan, except for potato chips.
*Stir well.
*Put into casserole pan and top with potato chips.
*Bake for 1 hour at 350 degrees.

PASTA
  ONION MASHED POTATOES
INGREDIENTS:
*6 servings instant potatoes
*2 tbsp dry onion soup mix
*Whipping cream
*Butter
DIRECTIONS:
*Prepare the instant mashed potatoes according to the box, but substitute whipping cream for the milk
*Add the dry soup mix and stir thoroughly
*Add extra whipping cream or butter to desired consistency

  CHEESY POTATOES ON THE GRILL
INGREDIENTS:
*1-20-oz. package frozen french fries, thawed
*1 cup shredded cheddar cheese
*1/2 cup chopped green onion w/tops
*1/4 cup half and half or milk
*2 tbsp butter or margarine
*salt and pepper to taste
*paprika
DIRECTIONS:
*Create a large square of foil, doouble thick and about 18 inches per side
*Spray with non-stick spray
*In a bowl, mix fries cheese, onions, and half and half
*Scoop mixture onto foil, top with salt, pepper and paprika
*Dot with butter
*Wrap securely in foil
*Grill packet 4-5 inches from medium coals turning 2-3 times, appproximately 20-25 minutes(You can also just bake them for 30 minutes at 350 degrees instead of grilling.)
*Makes 6 servings

   POTATOES CASSEROLE
INGREDIENTS:
*2 10-oz. packages frozen hash browns, defrosted
*3/4 cup melted butter
*1 tsp salt
*1/4 tsp pepper
*1/2 cup chopped onion
*1 can cream of chicken or mushroom soup
*1 pint sour cream
*1 1/2 cups grated sharp cheddar cheese
*2 cups crushed corn flakes
DIRECTIONS:
*Mix corn flakes with 1/4 cup melted butter
*In a large mixing bowl, combine potatoes, 1/2 cup butter, salt, pepper, onion, soup, sour cream, and cheese
*Pour into a greased casserole dish
*Cover with the buttered corn flakes crumbs
*Bake at 350 degrees for 45 minutes.
*Makes 12 servings
