Safe cooking for the HIV-positive

HIV-infected persons should not eat raw or undercooked eggs (including foods that might contain raw eggs, such as some preparations of hollandaise sauce, Caesar and other salad dressings, and mayonnaise); raw or undercooked poultry, meat, or seafood; or unpasteurized dairy products.

Poultry and meat should be well cooked and should not be pink in the middle (internal temperature greater than 165 F). Produce should be washed thoroughly before being eaten.

Following these guidelines will help prevent exposure to food-borne infections.
