It has been said that a country is only as rich as its cuisine. If this statement were true then The Bahamas is one of the world's most prosperous countries. Bahamian cuisine varies amongst many food groups. The seafood is both rich and flavored. In The Bahamas one may find a fresh harvest of fish, lobster and conch. Seafood dishes, however, are not the only great dining experience. Both beef and poultry dishes are served in numerous ways, unique only to The Bahamas. The wide variety of fruits and vegetables grown on the islands also help to enhance the taste of many gourmet entrees, as well as create uncommon deserts. The beverages too are marvelous. From the juices obtained from different fruit to the mixtures of island tropical alcoholic drinks, The Bahamas is world renowned as a great place to quench one's thirst.

Knowing that there are still a few of you who have not ever tried Bahamian cuisine (although somewhat unbelievable), we offer to you the opportunity to create a Bahamian dish and beverage for yourself. The entr�e is known as 'Conch Salad' whilst the drink mixture is referred to as a 'Bahama Mama'.

Conch Salad

Conch Vendor

  • 2 large conchs
  • 1 cup diced onions
  • 1 cup chopped green peppers
  • 2 large tomatoes, diced
  • 2 large limes
  • Salt
  1. Cut the conchs up into chewable chucks
  2. In a plastic bowl, mix the conch, onions, green peppers and tomatoes
  3. Squeeze the juice from the limes over the mixture
  4. Add salt for taste
  5. Mix once more

Conch salad can be served as an appetizer on eaten as a light snack. If conch can not be found either crab meat or lobster meat can be substituted.


Bahama Mama

  • 1 � oz. Coconut Rum
  • � oz. Triple Sec
  • Splash of Cream of Coconut
  • Orange and Pineapple Juice
  • Dash of Grenadine
  1. Mix together all ingredients over ice.
  2. Pour out beverage into a Hurricane glass
  3. Sip slowly

Great as a summer refreshment.
