2 potatoes |

1 tbs. vegetable oil |

1/2 cup chopped onion |

1/4 cup minced parsley |

3 mushrooms |

1 tsp. vegetable oil |

1/8 tsp. lemon pepper |

1/2 cup grated cheddar |

1 tbs.Parmesan cheese |
Bake the potatoes in the microwave or oven. If you bake them in the microwave, make sure to wash them first, then put small slits in both sides of the potato.
When they are finished let them cool in the refrigerator for about 1 hour. Slice the potatoes in half lengthwise. Carefully spoon the middle out of the potatoes.
Mix together 1 tsp. vegetable oil and the lemon pepper. Spoon a little bit of the oil mixture into the potatoes and place them in the oven under the broiler for 15 minutes or until they begin getting crispy.
In a bowl place the chopped onion, parsley, and mushrooms. Coat with 1 tbs. of vegetable oil Place in a fry pan and sauté until the onions are translucent.
Spoon the mixture into potato skins. Top with grated cheddar and parmesan cheese. Place in the oven until the cheese melts. Top with sour cream or yogurt and Enjoy!
