PROCEDURES
- Preheat the oven to 350°F. Grease and flour a large loaf pan. Line the bottom with wax paper. Grease and flour the paper as well. Set aside.
- Using an electric mixer, cream the butter until light and fluffy. Add the sugar gradually while continuing to beat at medium spees. Pour in the eggs and beat until smooth.
- Combine the flour and the baking powder in a bowl. Set aside. Alternately add the dry ingredients and the liquid to the creamed mixture, beating well after each addition. Bagin and end with the dry ingredients.
- Stir in the raisins and the nuts. Pour the batter onto the prepared baking pan.
- Insert the apple wedges in rows so that the rounded edge of each apple wedge stands upright in the cake batter.
- Combine the cinnamon and sugar in a small bowl. Sprinkle the surface of the cake with the mixture, covering it completely.
- Bake for 1 hour or until a toothpick inserted in the center comes out clean.
