Chunky Apple Cake
INGREDIENTS
  • ½ c butter
  • 1 cup granulated sugar
  • 2 whole eggs
  • 2 cups sifted all-purpose flour
  • 1 ½ tsps baking powder
  • 2/3 c fresh milk
  • ¼ c raisins
  • ¼ c coarsely chopped cashew nuts
  • 1 red apple, peeled and cut into paper thin wedges
  • 1 tsp cinnamon powder
  • 2 tbsps granulated sugar for topping
  • Chunky Apple cake
    PROCEDURES
    1. Preheat the oven to 350°F. Grease and flour a large loaf pan. Line the bottom with wax paper. Grease and flour the paper as well. Set aside.
    2. Using an electric mixer, cream the butter until light and fluffy. Add the sugar gradually while continuing to beat at medium spees. Pour in the eggs and beat until smooth.
    3. Combine the flour and the baking powder in a bowl. Set aside. Alternately add the dry ingredients and the liquid to the creamed mixture, beating well after each addition. Bagin and end with the dry ingredients.
    4. Stir in the raisins and the nuts. Pour the batter onto the prepared baking pan.
    5. Insert the apple wedges in rows so that the rounded edge of each apple wedge stands upright in the cake batter.
    6. Combine the cinnamon and sugar in a small bowl. Sprinkle the surface of the cake with the mixture, covering it completely.
    7. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
