Potato Salad
INGREDIENTS
  • 6 medium potatoes, cooked and cubed
  • 4 slices cooked bacon, minced
  • 2 tbsps bacon drippings
  • ¼ c chopped onions
  • ¼ c chopped celery
  • 2 tbsps chopped pickles
  • ¼ c water
  • ½ c vinegar
  • 1 tsp sugar
  • 1 tsp salt
  • 1 1/8 tsp paprika
  • ¼ tsp dry mustard
  • Potato Salad
    PROCEDURES
    1. Sauté onions and celery in bacon drippings until light brown.
    2. Add potatoes, pickles, and bacon bits. Cook while stirring gently for 2 minutes. Remove from heat.
    3. In a small saucepan, combine the rest of the ingredients and bring to a boil.
    4. Pour over potato mixture, blend throughly, and serve.
