Let's talk about Cooking! Don't Sweat It!
During the early part of the summer, before it gets too hot, I like to have my windows open, instead of using the A/C. I've had my windows open for a few months now, trying to catch up on my energy bill that skyrocketed over the winter. To keep things cool inside, I cook out as much as possible. Also, food just tastes so much better when it's cooked on the grill.

RECIPE OF THE MONTH
STUFFED, OR TWICE BAKED POTATOES...
This isn't an exact science, it's more of an idea.
-
Ingredients...Quantities all depend on how many you are serving.
baking potatoes, milk, shredded or cut up cheese, sour cream, butter, salt, pepper
-
Optional Ingredients...Depends on what you like.
bacon bits, chopped onions, chopped peppers, paprika, any seasoning that you like, anything else
DIRECTIONS...
-First you gotta wash the potatooes. then poke holes in them to aid in the cooking process. You can cook em in the oven, on the grill, or in the microwave. To check for doneness, poke with a fork or knife. The potato should be soft, and the object should penetrate easily.
Oven--smear with butter, wrap in aluminum foil, bage at about 400 degrees for about an hour.
-Grill --(my favorite) same as oven, but you have to use your best judgement on grill temperature.
-Microwave--A little tricky, cuz I do beleive that no two microwaves are the same. OK, skip the smear with butter, and NO aluminum foil, That would be a big fat NO NO. I would suggest putting them on a plate, and set it at 4 minute intervals. Every four minutes, check em, and if their not done, rotate, then do another 4 minutes.

Now that the taters are done, you gotta scoop out the insides and stuff em. Here's how...
(you might wanna let' em' cool a bit, because they are hot to handle. I usually hold them with a towel.)
-with a knife, cut a very thin slice off the top of each potatoe, lengthwise, of the entire length.
-Next, you need to scoop out the insides. Be careful not to go through the bottom of the potatoe. I get as close to the edges as I can, without poking through. I use a small spoon with serrated edges.
Put all of the insides into a bowl.
-Add all of your ingredients. You may want to add a little at time, you can always add more if you need to.
-Mash everything up. I do this with a fork. You can use a tater masher, or whatever works best.
-Now, fill the potatoes up with your creation.
-Afterwards, you will need to place the potatoes back into the cooking vessle that you chose. My rule is to leave them there until all of the other food is done. ( A few minutes will do)

Freeze fruit juice in ice cube trays and use them instead of ice in various drinks such as Tea or other Juices. You can even use them to make smoothies.
