| PORK WITH APPLES AND ONIONS- 7 points 6 (6 oz.) center cut pork chops 1 tsp. salt 1/2 tsp black pepper cooking spray 1 tbs. olive oil 2 large onions, each cut into 8 wedges 2/3 cup dry white wine 4 Granny Smith apples, peeled and each cut into 6 wedges (about 1 1/2 lbs) 1 tbs. fresh lemon juice chopped fresh parsley |

| Sprinkle both sides of chops with salt and pepper. Spray a Dutch oven with cooking spray and heat over medium-high until hot. Add 3 chops and cook 4 minutes on each side or until lightly browned. Remove chops from pan and set aside. Repeat with remaining 3 chops, remove from pan and set aside. Heat the oil in the same pan. Add the onions and cook 8-10 minutes or until golden brown, stirring occasionally. Add the wine and cook 1 minute. Return the chops to the pan, nestling them into the onion mixture. Reduce heat to medium low; cover and cook 15 minutes. Add apples to the pan. Cover and cook another 25 minutes or until chops are tender. Remove chops from pan and keep warm. Increase heat and bring apple/onion mixture to a boil. Cook about 10 minutes or until the liquid is almost evaporated. Stir in the lemon juice. Serve the chops with the apple/onion mixture and sprinkle with parsley. Makes 6 servings, 7 points each. |
