| GREEK MEAT ROLLS WITH POTATOES- 6 points 1/2 lb. extra-lean ground beef 1/2 lb. extra-lean ground turkey 1/2 cup egg substitute 4-5 cloves garlic, crushed 1/2 cup plain bread crumbs 4 oz. dry red wine 2 tsp. cumin 2 tbs. dried parsley 1 tsp. salt 1/2 tsp. pepper 2 tsp. margarine 2 tsp. olive oil cooking spray 6 medium sized potatoes 3 (8 oz.) cans tomato sauce 1/2 cup dry red wine 1 tsp. cumin salt and pepper to taste |

| Combine the ground meats with the egg substitute, garlic, bread crumbs, wine, cumin, parsley, salt and pepper. Form into 24 sausage shaped rolls. Heat the margarine and olive oil in a non-stick skillet over medium heat. When it begins to foam, add the meat rolls and cook until browned, turning them occasionally so they will brown all over. Remove the rolls with a slotted spoon and place in a 9 X 13 X 2 inch roasting pan sprayed with cooking spray. Reserve drippings in skillet. Peel and quarter the potatoes and saute' them in the same skillet that you used to cook the meat rolls. When they start to become browned, add 1/2 cup water to the skillet, cover and cook over medium heat for 5 minutes, or until the potatoes begin to soften. Remove the potatoes from the skillet and add to the roasting pan with the meat rolls. Pre-heat oven to 350 degrees F. To the skillet add the 3 cans of tomato sauce, 1/2 cup wine, 1 tsp. cumin, salt and pepper to taste. Simmer over low heat for 10 minutes. Pour the sauce over the meat rolls and potatoes in the roasting pan and bake at 350 degrees F. for 30 to 40 minutes, or until potatoes are cooked. Makes 6 servings- 6 points each. |
