PORK CHOPS DIJON- 5 points

       
4 (4 oz.) boneless center cut loin chops
      1/2 tsp. salt
      1/2 tsp. pepper
            non-stick cooking spray
      1/3 cup fat-free chicken broth
   1 1/2 Tbs. Dijon mustard
      1/3 cup fat free evaporated milk  ***(see recipe below)

Trim any visible fat from the chops.  Sprinkle both sides with salt and pepper.  Spray a large heavy skillet with cooking spray and heat the skillet over medium-high heat until hot.  Add the chops and cook 3-4 minutes on each side until browned.  Remove chops from skillet and keep warm. 

Add the chicken broth to the skillet and stir to loosen any browned bits.  Combine the mustard and the evaporated milk and add to the skillet.  Reduce heat and simmer 7 or 8 minutes, or until the sauce is thickened slightly.  Spoon sauce over chops.  Makes
4 servings, 5 points each.


***
You can make your own fat free evaporated milk by combining 1/3 cup of nonfat dry milk powder with 1/2 cup water.  Mix well.  Makes 1/2 cup.
