CUCUR BADAK (FRIED SWEET POTATO CAKE WITH SAVORY FILLING)
Cucur Badak is one of my favorite Malay kuih-muih (local cakes and sweet treats).
Cucur Badak use a lot of local & Asian ingredients e.g sweet potato, fresh turmeric, lemongrass, kaffir lime leaves, grated coconut and etc.
KETUPAT
Ketupat is a Malay compressed rice cooked in coconut leave. When selecting ketupats, choose those that are as green as possible without the brown edges. This recipe makes about 30 ketupats.
Puteri Ayu (steamed mini pandan sponge cake)

*Makes around 15 small cakes
2 eggs
100g caster sugar
150g plain flour
1/2 tsp baking powder
1 tsp ovalette / cake emulsier
120ml coconut milk (blend 4pcs pandan leaves with coconut milk)
1/2tsp salt
A drop of green food colouring, optional

NASI LEMAK BUNGKUS

Nasi Lemak (coconut rice)
4cups rice (I mix Jasmine rice and local rice)
Beef Rendang (Rendang Daging) or Spicy Beef Stew with Coconut
Ingredients:
1 1/2 pound boneless beef short ribs (cut into cubes)5 tablespoons cooking oil
1 cinnamon stick (about 2-inch long)
3 cloves
3 star anise
3 cardamom pods

Auntie Ruby's Assam Laksa
~Boil the fish for 5 minutes.
~Debone the fish. (Detailed steps here)
~Separate the heads and smash them.
~Then along with the bones, add back to the pot of simmering stock.
