1. Acevedo, Teresita P.

2. Azanza, Ma. Patricia V.Dr. Azanza is an Associate Professor of the Department of Food Science and Nutrition, College of Home Economics, University of the Philippines-Diliman.  Her fields of specialization are food microbiology and food safety.  Her current and long-term research and publication efforts are focused on socially relevant topics including:  HACCP application in the food industry and by government regulatory agencies, rice processing, safety of streetfoods, and shellfish processing and microbiology.  She is currently involved with food safety efforts of the Department of Health particularly with the Bureau of Quarantine and International Health Surveillance and Bureau of Food and Drugs.  For the past years, Dr. Azanza has been actively conducting rice processing researches in collaboration with the Philippine Rice Research Institute.  Dr. Azanza is assisting various food processing industries in their implementation of HACCP and other food science and technology concerns.

4. Del Rosario, Minerva Jane G.Minerva Jane G. Del Rosario is an Assistant Professor at the Department of Food Science and Nutrition, College of Home Economics in the University of the Philippines in Diliman, Quezon City, Philippines. She finished her undergraduate degree in Food Technology and MS in Food Science at the University of the Philippines Los Banos in 1990 and 1996 respectively. Working with the academe for 5 years as a research associate at the IFST, UPLB exposed her considerably in the areas of research in fruit and vegetable analysis particularly fruit and vegetable juices, sensory evaluation and food processing. Likewise, she was extensively involved in various extension programs on Nata de Coco of the Institute. She also have extensive exposure in the food industry for 6 years where she was a head food technologist and a snack flavorist in two separate private companies gaining her experience in raw material sourcing, production supervision, product formulation and quality control. Being a faculty broadened her skills and knowledge in the field of Food Science teaching food chemistry, food analysis, sensory evaluation, food engineering and basic food technology courses of the department. She has worked on a project on street food vending in establishing baseline data on the training needs of Sanitation Inspectors and Street Food Vendors in NCR, Philippines. This gave her good exposure in Good Manufacturing Practices (GMP), Food Safety and Hazard Analysis and Critical Control Points (HACCP). Minnie has also very keen interests in parchment craft, badminton, tole painting and music in her leisure time.

5. Dumelod, Benelyn D.A government and university scholar in college, Benelyn D. Dumelod completed a degree in food technology, graduated with great distinction and received the Academic Excellence in Science award from the Department of Science and Technology (formerly National Science and Technology Authority).  Dumelod holds a master’s degree in food science, was a research fellow in Japan and has undergone training in the US and China.  For the past 10 years, she has been involved in food science and nutrition research, as thesis adviser to both undergraduate and graduate students, and as leader or co-leader in five funded research projects.  From these research ventures, she ( and her advisees and co-researchers) has presented papers in local and international scientific gatherings and published articles in peer-reviewed journals.  Currently working towards a doctorate in food science, she is teaching food analysis part-time and serving as adviser to an NGO and several employment generation groups, while still enjoying her family and friends, photography and badminton, books and music, writing and editing.  She lives by the maxim All From God; all for God!

6. Francisco, Ma. Leonora dL.Ma. Leonora dL. Francisco earned a B.S. degree in Food Technology and a master’s degree in Food Science from the University of the Philippines, and a master’s degree in applied science in Food Science and Technology from the University of Western Sydney, Australia, under the AusAID Scholarship Program in 2000.  Francisco is an Assistant Professor in the Food Science and Technology group of the Department of Food Science and Nutrition.  Francisco lectures General Microbiology, Food Microbiology, Food Processing and Food Packaging courses.  She also serves as research adviser to undergraduate students under the BS Food Technology program.  Her research interests include thermal processing, product development and optimization

7. Gabriel, Alonzo A.A recipient of the RA 7687 Science Scholarship of the Science Education Institute-Department of Science and Technology (SEI-DOST); Al Gabriel graduated from the University of the Philippines-Diliman with a degree in Bachelor of Science in Food Technology.  He worked as a researcher for a Non-Governmental Organization advocating for the advancement of food science and technology in the Philippines before he was hired as an instructor at the College of Home Economics, UP Diliman in 2003.   Mr. Gabriel has taught Food Science and Nutrition courses including Fundamentals of Food Preparation, Food Processing, General Microbiology and Fundamentals of Food Technology.  Currently completing his Master’s Degree in Food Science, Al Gabriel is planning to work with Microbial Food Safety for his MSc  Thesis.  His research interests include food micronutrient fortification, water safety and agricultural and fisheries products processing and safety.  Al believes that work in the academe brings outs the best in him, making him appreciate more the values of compassion, friendship, and pursuit of excellence.  Visual arts, literature and music are amongst his extra academic interest.

9. Luna, Myrna Benita Z.Myrna Benita Zamora-Luna is an Assistant Professor at the Department of Food Science of the University of the Philippines at Diliman.  She obtained her B.S. Food Technology and  MS Food Science from the same University.  She is now pursuing Ph. D in Food Science.  Prof.  Luna teaches courses in general microbiology, principles of sanitation and hygiene, food processing, food packaging and introduction to food technology.   Over the past decade, she has assisted the micro, small and medium scale food industry in the areas of food processing,   food quality improvement and food safety through various capacities as the past plant officer and faculty-in-charge of the Pilot Food Plant and through her private consultancies. She has conducted research and authored a number of publications on food safety.  She is currently interested in undertaking research in minimal processing and food packaging.

10. Rumbaoa, Rowena Grace O.Rowena Grace O. Rumbaoa is an instructor in the Department of Food Science and Nutrition at the University of the Philippines.  Ms. Rumbaoa received her BS Food Technology degree from the University of the Philippines and is currently finishing her MS degree from the same University.  She had co-authored some work on algal polysaccharides while holding a Research Associate position at the Marine Science Institute also in UP.  Over the past five years, Ms. Rumbaoa has taught General Microbiology, Food Chemistry, Principles of Food Preparation and Food Processing to undergraduate students at the University.  In collaboration with the Postharvest Horticulture Training and Research Center and the Material Science division of ITDI-DOST, she is currently working on her graduate thesis on the Modified Atmosphere Packaging of Carabao Mangoes.  She intends to pursue a Doctoral degree in Food Science, continue teaching in the University, and pursue research works on postharvest and processing technology and food analysis.

11. Villarino, Blanca J.Prof. Blanca J. Villarino has M.S. Food Science and B.S. Food Technology degrees from the University of the Philippines, Diliman.  She attended 6 month training on sensory evaluation and product development at the University of Georgia, Georgia, U.S.A.  in 2002.  Her research interests include sensory evaluation and development of different food products.  Prof. Villarino can also work on studies that involve thermal and dehydration processing, packaging and HACCP.  Prior to her appointment as Assistant Professor at the Department of Food Science and Nutrition, College of Home Economics, UP Diliman in June 2004, she was the supervisor of the Pilot Food Plant (PFP) for 9 years.  She was in-charge of the overall operations of the PFP including quality control, research and development, processing and training.  She was also involved in the reconstruction of the PFP, purchase of new equipment and strengthening the descriptive sensory analysis capability of the PFP.  She plans to work on more sensory and consumer research projects and write textbooks and laboratory manuals on sensory evaluation which other universities can use.

2. Bullecer, Ernani R.Mr. Bullecer completed his Bachelor of Science in Community Nutrition at the University of the Philippines-Diliman.  He emerged as the top placer in 2001 Nutritionist-Dietitian Licensure Examination.  He is currently pursuing his Master of Science in Nutrition also from this university.  At present, he is working on his thesis proposal in the field of obesity assessment.  Prior to his teaching in the university, he was clinical Nutritionist-Dietitian at the Philippine Children’s Medical Center in Quezon City.  He is currently handling courses in Diet Therapy, Nutrition in the Life Cycle,  Dietary Patterns and Nutrition Education & Training.  Research interests include Clinical Nutrition and Nutritional Assessment & Epidemiology.

3. Fernandez, Carleneth P.Carleneth Pineda Fernandez received her degree in B.S. Community Nutrition from the University of the Philippines in 1999.  She began her career as a Program Officer at the Nutrition Center of the Philippines, which was focused in advocacy and training of local health and nutrition workers in the local government units and villages.  Her brief connection with the National Nutrition Council provided her with a background on how government programs are planned and transmitted for implementation.   In line with this, she is interested in conducting research on public health nutrition and envisions that nutrition will be seen as a priority in planning and allocation of resources.  She is currently completing her MS in Nutrition at the College of the Home Economics-UP Diliman where she is employed as a faculty member.

4. Florencio, Cecilia P.

5. Luna, Ma. Veritas F.Ma. Veritas F. Luna is an Associate Professor at the Department of Food Science and Nutrition, College of Home Economics, University of the Philippines, Diliman, Quezon City. She obtained her Ph.D. in Nutrition at the University of the Philippines.  She has been with the department for more than 20 years teaching basic food preparation, meal management, food preservation and dietary patterns in undergraduate programs. Her research experience includes estimation of food threshold, determination of food consumption and exploration of food safety knowledge and practices.  She has been involved in several extension services revolving these subject matters as resource speaker, consultant, lecturer, demonstrator and coordinator. She is also a recipe developer.  Her long-term research goal is to find ways of helping mothers of low-income households prevent malnutrition among young children.

7. Querubin, Milagros P.Milagros P. Querubin is an Associate Professor of the Department of Food Science and Nutrition of the University of the Philippines.   She obtained  her  PhD in Nutrition from the University of the Philippines, Diliman. Her undergraduate (BS Community Nutrition) and master’s degree (MS Nutrition) were also obtained from the same university.  She teaches basic nutrition, nutrition for the at-risk group,  nutrition education, assessment of nutritional status and public health nutrition.  Her research interests and extension work focus on nutrition education, food security, family food decision making and gender concerns in nutrition.  She  has authored a number of publications on nutrition education, nutrition in the life cycle and  women’s work and nutrition.     Prof. Querubin advocates that  access to adequate and safe food is a basic human right. Ensuring adequate nutrition for every Filipino family is not only a professional obligation but a personal mission.

8. Tiangson - Bayaga, Cecile Leah P.She is a graduate of the MS Nutrition and BS Community Nutrition (cum laude), degree programs of the College of Home Economics, University of the Philippines-Diliman. her research interest is on essential fatty acids. She has studies on the essential fatty acids in the breast milk of Filipino women, a pioneer study in the Philippines, and cooked milkfish. She has also been involved in other studies such as the nutritional evaluation of Philippine Natural Grade carrageenan, effect of oatmeal on the lipid profile of hypertensive individuals, and the nutritional evaluation of coconut juice as a possible sports drink. Through these studies, she was able to publish articles, as a co-author, in internationally refereed journals. She recently co-authored a laboratory manual on basic nutrition. She is currently developing a teaching module on basic nutrition and writing a chapter on the benefits and sources of docosahexaenoic acid (DHA) in the human milk. She is also a registered nutritionist-dietitian.
