Directions

Halve the hens through the breast. Flatten with the palm of your hand.

In a mortar or food processor, pound or mince garlic, shallots and sugar.

Add remaining ingredience to mixture and mix thoroughly

Marinate hens with mixture for at least 2 hours.

Set hens, skin-side down, on a barbecue over medium coals for 15 minutes.

Flip and cook for 15 more minutes or until thoroughly cooked.

Serve with Nuoc Cham dipping sauce
