Summer brings us the best fruits and vegetables of the year. Take advantage of fresh produce, specially regional produce like berries, melons, greens, tomatoes ... They come is so many shapes and shades. Fresh fruits and vegetables are great in salads, cooked or grilled ... whichever way you like them, eat fresh and healthy this summer.
A diet of fresh fruits and vegetables with a personal chef is a great way to enjoy summer. Chopping vegetables for salads is a time consuming task, so have plenty of salad ingredients ready to go. Steaming and grilling fresh vegetables is great ahead of time or just before a meal. Fruits are easy to store and there are infinite combinations to choose from.

Summer Menu
Summer dishes are mostly served raw, lightly steamed and cold. I view summer as an time to enjoy fresh fruits and vegetables. These dishes complement the year around menus: Mediterranean, Latin & Caribbean, & California cuisine.
Summer Green Salad:Greens, vine ripe tomatoes, yellow and red peppers, onions with olive oil and vinegar (+ poached chicken or fish)Walnut-Gorgonzola Salad: Tomatoes, cucumbers, peppers with oil-Gorgonzola vinaigrette & walnuts
Tomato, Mozzarella & Basil Salad:Tomatoes, and peppers topped with fresh Mozzarella and basil with olive oil and balsamic vinegar (+ olives)
Avocado & Tomato Salad:Avocado, tomatoes, onions, cucumbers topped with lemon and olive oil vinaigrette (+ italian olives)
Light potato salad:Steamed potatoes, green beans, broccoli with a light olive oil and herb vinaigrette
Grand Starter Salad: Greens, tomatoes, cucumbers, with hard-boiled eggs, tuna, feta with herb vinaigrette
Green Bean Salad: Steamed green beans, carrots, with hard-boiled eggs, tofu, tuna, feta
Mediterranean Summer Appetizer: Humus, chic peas, olives, green beans, peppers, cucumbers with herb olive oil vinaigrette (+ tahina)
Gazpacho (Soup): Cold vegetable soup, tomato base with onions, cucumbers, peppers and fresh herbs (mild to spicy + avocado, sour cream, jalapinos)
Asparagus-chicken risoto: Creamy Italian rice with asparagus and cubed chicken with a mushroom, carrot and herb sauce
Asparagus Chicken: Broiled chicken with asparagus, green beans and carrots with a light lemon-herb sauce
