Southern Style Cucumber and Onion Salad

2 large cucumbers, sliced paper-thin
1/2 large vidalia onion, sliced into tiny strips
2/3 cup white vinegar
1/3 cup fresh cold water
1/2 tsp sea salt
2 tbsp local honey
dried dill

heat the vinegar and water with the honey and salt in a microwave until the honey and salt are dissolve-able (take it out and stir it after a minute, and give it another 30 seconds if you can't get the salt to dissolve).  layer in a bowl with high sides 1/4 the cucumber slices, 1/4 the onion slices, a generous shaking of dill, and 1/4 the dressing.  repeat layers until everything is used.
cover tightly and refrigerate overnight or longer.  shake the salad up once a day or so if you keep it to better integrate the flavors.
