Tofu Reuben Sandwich
2 slices good whole-grain bread
1 large slize swiss cheese
1/4 c fresh sauerkraut, drained
2 tsp ketchup
1.5 tbsp mayo       
1/8 tsp pickle relish 
(can substitute about 2 tbsp 1000 island dressing or russian dressing for last three ingredients) 2 tsp margarine
enough pre-frozen, thawed tofu (more info on this technique) to cover the bread
1 tbsp vinaigrette

Combine the ketchup, mayo, and pickle relish to make 1000 island dressing and set aside. Heat the vinaigrette in a skillet over medium high heat. When it starts to sizzle, add the tofu and cook 4-5 min. on each side until it starts to brown up a little and all the dressing is absorbed.  Remove the tofu from the pan, wipe the pan, and replace it on the heat. Add the margarine to the hot pan and assemble the sandwich: 1 slice bread, cheese, tofu, kraut, and the dressing or mayo/ketchup/relish mixture, and the other slice of bread. Add the sandwich to the margarine in the skillet and grill until browned on both sides.

Covering the skillet while the sandwich is on side 1 for a couple minutes will facilitate a more evenly-melted cheese. can be made vegan using nayonaise and soya kaas.
