Vegan Sweet Potato Casserole

5-6 sweet potatoes
1 small can crushed pineapple
3/4 cup apple cider
Cinnamon and nutmeg to taste

Bake sweet potatoes until tender (like regular potatoes, they're pretty forgiving on both time and temperature, so you can bake em while you bake other things...but they take around an hour at 375 degrees, depending on size). Cut the hot potatoes in half and let them cool. Scoop out the innards and mash them with the other ingredients. Slightly lumpy is OK. Scrape into a
casserole dish, and bake at 350 degrees for 45 minutes.

You can add brown sugar, but I find it unnecessary with the sweetness of the potatoes and the cider. Also, you can add marshmallows, but then it won't be vegetarian. I s'pose you could use marshmallow fluff instead, which is generally vegetarian but not vegan.
