BBQ Tofu Sandwich
2 slices good bread
1/4 cake tofu, prefrozen and thawed (more info)
2 tbsp onion, diced
2-3 slices white cheese, any kind
1 tbsp margarine
bbq sauce of your choice

Dice the tofu. Put 1/2 tbsp. margarine in a skillet and add the onion. Saute until semi-clear and then add tofu and a healthy dousing of bbq sauce.  Stir and cook until the sauce has had a good chance to seep into the tofu and everything looks integrated. Dump the tofu and onion into a bowl and wipe out the skillet and put it back on the heat. Melt the remaining margarine and add a slice of bread, the tofu mixture, the cheese, and the other slice of bread. Grill as you would any sandwich. I like to let the cheese overhang the sides and drip down onto the skillet surface...it fries and it gets crispy and really yummy.
I usually make so much tofu-onion mix that the sandwich won't hold in my hands, so I eat it with a knife and fork. You can put coleslaw on the sandwich before the cheese if you want, that's really good too.
