1 package of egg roll wraps.( make sure the package contains 20 wraps or use enough to total twenty rolls) |

1 3/4 cups pepperoni |

4 cups grated cheddar cheese |

1/3 cup olive oil, peanut oil, or vegetable oil |

1 egg, beaten |

pizza sauce |

2 tbs. parmesan cheese |
Take an individual egg roll wrap diagonally on a flat surface. Spread one teaspoonful of pizza sauce on the wrap. Sprinkle a little bit of parmesan cheese over the sauce.Place three slices of pepperoni on the sauce. ( I used small sliced pepperoni, if you are using larger slices, quarter each slice before measuring, then count each quarter as one slice.) Sprinkle a little bit of cheddar over top the pepperoni. Now roll the wrap up halfway. Dip your fingers into the beaten egg and dab the horizantal corners of the wrap. Fold them over and continue to wrap until you reach the top and you have the top corner still visable. Dab a little bit of the egg mixture on the last corner and fold it over the wrap. Continue this until all the wraps are finnished. When all are done, place the oil in wok or deep frying pan. Heat on medium high heat. Place a few rolls into the hot oil at a time. They don't take long to cook, so keep a close eye on them. They shouldn't need more then 3 minutes each side. Let them cool on a plate, then place five or so in individual freezer bags and freeze until you want them for lunch or a snack. Frozen, just remove them from the bag, place on a microwave safe plate and cook for 1 to 11/2 minutes. Enjoy!
