2 cups mashed potatoes |

1/4 cup sharp cheddar cheese |

2 eggs, lightly beaten |

2 tsp. flaxseed oil |

1/2 tsp. Italian seasoning |

1/2 tsp. minced garlic |
 |

1/2 tsp. kelp seasoning (optional) |

1 1/2 cups crushed tortilla chips |

1/4 cup lightly cooked chopped onion |
To your cooled mashed potatoes add cheese, flaxseed oil, cooked onion, garlic, Italian seasoning, and Kelp seasoning. Mix well. This is a good opportunity to use up those left over mashed potatoes.
Lightly beat the two eggs.
Place the crushed tortilla chips on a plate.
Take a good tablespoon of the mashed potato mixture and form it into small cylindrical shape.
Gently roll into the tortilla chip coating, they don't have to be completely coated. Next, place in the egg mixture, then roll back into the chip coating, this time coating well. Do this until all are done. To cook, fry in a couple of tablespoons of olive oil. Fry only until sides are crispy.
