Oatmeal Chocolate Chip Muffins
This recipe isn't sugar laden and it has increased amounts of fibre, in  other words, I don't feel guilty when I give one to my son for a snack.

11/2 cups milk
1 egg
1/4 cup vegetable oil
1 tbs. sour cream
1 cup regular cooking oats
3/4 cup chocolate chips
1 cup white flour
1 cup whole wheat flour
1 tbs. wheat germ
1/4 cup packed brown sugar
3 tsp. baking powder
1 tsp. salt
1/4 cup plus 2 tbs. graham cracker crumbs (I just crush the crackers myself, I always have them on hand because my son likes them as a snack)

In a small bowl combine the milk, egg, oil and sour cream. Whisk until it is all combined.
In a larger bowl combine the rest of the ingredients and stir to combine. Pour the wet ingredients into the dry and stir once again and mix together, just until combined.
Spoon into a greased muffin tin and bake in a preheated 350 degree oven and bake for 20-25 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
