| Sweet & Nutty Lentil Salad |

This salad was inspired while I was reading about good fats versus the not so good fats. I came up with a salad that is high in fibre, low in bad fat(saturated fats), high in the good fat (super unsaturated fats), and most importantly, tastes delicious!

1/4 cup walnuts, halved |

11 oz. can mandarin oranges (without the juice) |

1 tsp. soy sauce |
 |
|
1 tsp. hoisin sauce |
 |
|
1 tbs. flaxseed oil |
 |
|
1/2 tsp. sesame oil |
 |
|
1 tsp. honey |
 |
|
3/4 cup lentils (any colour) |
 |
|
1/4 cup sunflower seeds( raw, unsalted) |
Cook the lentils in boiling water, until they are soft. In another bowl combine the walnuts, soy sauce, sunflower seeds, hoisin sauce, flaxseed oil, sesame oil, and honey. Stir together. Add the lentils when they are cooked, and have cooled off a little. Add the mandarin oranges at this time as well. Stir together.
