Bean Salad
        

   11/2 cups cooked beans ( I used leftover kidney and northern beans)
   1/4 cup minced onion
   1 clove of garlic, minced
   1/2 cup chopped spinach
   1/4 cup green pepper, chopped
   1 tsp. hot red pepper, minced
   1/4 cup                             chopped
Dressing
   1 tbs.                    
   1 tbs. olive oil
   1/4 cup tarragon vinegar
   1/2 tsp. stone ground mustard
   1 tsp. lemon juice
Combine all of the salad ingredients in a bowl and mix together lightly.
To prepare the dressing, place the ingredients in a bottle or jar and shake it well or place the ingredients in a bowl and whisk it lightly to combine.
When this is finnished simply pour the dressing over the salad and enjoy!
