11/2 cups cooked beans ( I used leftover kidney and northern beans) |

1/4 cup minced onion |

1 clove of garlic, minced |

1/2 cup chopped spinach |

1/4 cup green pepper, chopped |
 |

1 tsp. hot red pepper, minced |
 |

1/4 cup chopped |
Dressing
 |

|
1 tbs. olive oil |
 |
|
1/4 cup tarragon vinegar |
 |
|
1/2 tsp. stone ground mustard |
 |
|
1 tsp. lemon juice |
Combine all of the salad ingredients in a bowl and mix together lightly.
To prepare the dressing, place the ingredients in a bottle or jar and shake it well or place the ingredients in a bowl and whisk it lightly to combine.
When this is finnished simply pour the dressing over the salad and enjoy!
