Coleslaw

1/2 small cabbage, green or red |

1 medium carrot |
 |
|
1 broccoli stalk, peeled and chopped |

|
1/4 medium onion, chopped |
In a food processor, place the clean cabbage, carrot and broccoli stalk. Process until all the vegetables are shredded. Place the shredded vegetables in a bowl. Chop the onion and add it to the bowl.
Honey Dijon Dressing

1 tbs. flaxseed oil |
 |
|
1/4 tsp. minced garlic |
 |
|
2 tbs. honey |
 |
|
1 tbs. lemon juice |
 |
|
1 tsp. stone ground mustard |
Place all the ingredients in container with a lid and shake to combine or place them in a bowl and whisk until combined.
Pour the dressing over the coleslaw and mix to combine.
