1 cup cooked beans |

8 sun dried tomatoes (softened) |

1 tsp minced garlic |

3 green onions, chopped |

1 tsp Italian seasoning |

1 1/4 cup tomato juice |
 |

2 cups fresh mushrooms, quartered |
 |

1 cup zucchini, chopped in large pieces |

2 tbs olive oil |
 |

1 tsp balsamic vinegar |
 |
|
1 tsp dried basil |
 |

2 tbs. parmesan cheese |
In a bowl place the olive oil, balsamic vinegar, and Italian seasoning. Add to it the mushrooms, green onion, zucchini, and sun dried tomatoes. Stir this up just enough to coat the vegetables.
In a saucepan, place the tomato juice, garlic, and dried basil, and parmesan cheese. Place this on medium heat and let it simmer.
Place the vegetable mixture in a large saucepan, electric frying pan or wok and cook on medium high heat until the vegetables begin to get soft. At this time add the beans and stir them to combine with the vegetables. Now you can add the tomato juice that has been simmering. Stir the mixture very well and just let it simmer on medium low heat for 30 minutes.
