4 plum tomatoes quartered, or 1 tomato sliced into eighths |

1/2 bunch of broccoli, chopped into bite sized flowerets |

1/4 red pepper sliced |
 |
|
1/4 onion (red or white, sweet or not) |
 |
|
1/4 cup cucumber |
 |
|
Fresh herbs if you have them, I used basil and chives |

If you want to add nuts, they make a very nutritious addition, as long as they are unroasted and unsalted, if they are salted rinse them well. |
Place all vegetables, herbs and nuts in a bowl.
Raw Vegetable Salad Dressing

1/4 cup red or white wine vinegar or white vinegar |
 |
|
3 tbs.. olive oil |
 |
|
1 tsp. of your favorite mustard |
 |
|
2 tbs.. plain low fat yogurt |
 |
|
1/8 tsp. ground pepper |
 |
|
1/4 tsp. thyme leaves (fresh or dried) |
 |
|
Juice of 1/4 lemon |
Combine all the ingredients and place in a bowl, whisk well or place in a jar, tightly cover and shake well to combine.
Pour on top the raw vegetable salad, and refrigerate for 1 hour. The longer it sits the more pungent the vegetables become.
