| Feel Good Rice and Bean Dish |

1 cup brown rice |

1/4 cup lentils |
 |
|
2 Broccoli stalks. peeled, and sliced |

1 large carrot, washed very well or peeled , and sliced |
 |
|
1/4 red pepper (you can use green if that is all you have, I like red for color) |

1 tsp. minced garlic |

Some spicy seasoning that you have - just a pinch. (I used Jamaican Jerk seasoning, I bought it by mistake but it tasted wonderful. I'm looking forward to seeing what else I can use this spice in) |

1 tbs.. oil, (preferably the healthy kinds, like olive or sunflower oil) |

Bragg's Liquid Aminos or Soy Sauce |
Cook rice according to package directions. Cook lentils. To cook them, just place in a saucepan of boiling water and simmer until they taste relatively soft. This usually takes about 15 min. of steady simmering. Place the broccoli stalks, carrot and pepper in a fry pan. Also, in the fry pan add the oil and 1/4 cup of water, just enough that will be absorbed by the vegetables. This is a method of steaming if you don't have a steamer or steaming basket. If you do have one of these then steam away !
When the rice is finished, place in a bowl, add the lentils. When the vegetables are done, add to the rice. Now you can add your seasonings, and other fresh herbs if you have some. Here is where you add the nuts as well. Now, season to taste with the Braggs liquid aminos. Voila! You have an ultra healthy lunch! , and believe it or not you won't need any else, nutritionally speaking.
