Here, I will put recipes of meals that I personally prepare.

Kurzunush (for 2 persons)


ingredients:

1/2 kg flour
1/2 kg minced meat
5 mid-size potatoes
1 big (or 2 mid-sized) onion
2 garlics
reyhan (i dunno what it is in english for the time being-looks like pepermint or tea)
salt, red pepper
1/2 spoon tomato sauce
oil

Put the potatoes into a pressure cooker and cook for 20 minutes. At the same time, roast the meat for ummm 10 mins, then add half of the minced onions and roast for another 5 mins. When the potatoes are finished cooking, peel and mash them, put salt, reyhan and pepper into the puree. Now get your hands on the flour, add some water (be careful, not too much) and 1/2 table spoon of salt and prepare the dough. Then roll it into a 2-3 mm sheet. Get a big glass and use it to cut circles from that dough sheet. Put appropriate amounts of either meat or puree into those dough circles and then close those circles. In the end you should have about 15 pieces (now in the form of semi-circles because we closed the circles) with meat and about 15 pieces with puree. Get a pot, fill it halfway or 3/4 with water and wait till it boils. Then, put those pieces (which are called "kurzunush" in chechen language) into the pot, but not all of them! There should be enough room for the "kurzunush" to float peacefully. I would say, put 10 at a time and cook them for 5-8 mins, not more! Meanwhile the other person should peel the garlics and mash them nicely. When all the kurzunush is cooked, get a pan put a few drops of oil in it, put 1/2 table spoon tomato sauce and cook it for 5 mins. Get a small bowl, pour that tomato in, mix it with the mashed garlic, add some 4 table spoons of kurzunush cooking water and mix it. Now eating manners: get a fork, pick a kurzunush with it, immerse it into that garlic sauce, put it slowly in your mouth and mmmmmmmmmmmmm LOL. That is it!

CIRDINGIS


Malzeme (4 kişilik)

1 kg kemikli et (dana, koyun, keçi)
½ kg sert buğday unu
3 baş sarımsak
tuz, salça, sıvı yağ

Yapılışı (Özet):

Düdüklüye 1.5 lt su koy, sıcaklığı 3 yap, kaynayınca eti içine at, kapağı kapat, horozu açık bırak. Horozdan buhar çıkınca horozu kapat, sıcaklığı 2.5 yap. Yaklaşık 10 dak sonra, horozdan yine buhar çıkınca sıcaklığı 2 yap, 1 saat kaynasın. Sonra altını kapat, havasını çıkart, et üzerindeki köpüğü temizle. Eti al.

Unu siniye konik biçimde dök, tepe kısmını oy, 1 tatlı kaşığı tuz at. Su dökerek hamuru karıştır. Hamur kulak memesi kıvamına gelene kadar su katarak yoğur. Hamuru parçalara böl, uzun silindirler haline getir, düzle, kes. Cırdıngışların yapışmaması için un serp. Parmakla yuvarla, siniye diz.

Cırdıngışların hazırlanışını resimli görmek için tıkla (yüklenmesi biraz sürer !)...

Sarımsakları soy, döv.

Et suyunun içine cırdıngışları at, sıcaklığı 3 yap. Eğer su az ise 0.5 lt'ye kadar su ilave edilebilir. Suyun tuzunu kontrol et. Cırdıngışları karıştır. Kaynamaya başladıktan sonra 5-6 dak bekle.

Salçalı ve sade sosları hazırla: yağ, salça, et suyu, sarımsak, cırdıngış suyu.


Resmiye Köftesi (from my mom)


ingredients for 4 persons (in Turkish):

1/2 kg az yağlı koyun ya da dana kıyma
1/2 demet maydonoz
1 küçük soğan
1 yemek kaşığı yoğurt
2 dilim bayat ekmek içi
1 yemek kaşığı zetinyağı
Tuz, karabiber, pul biber

Soğan rendelenir. Maydonoz ince kıyılır. Bayat ekmek içi ufalanır. Tüm malzeme bir tencere içinde yoğrulur. Avuç içi ile köftelere şekil verilir.


Leek (for 2 persons)


ingredients:

3 mid-sized leeks
100 gr. mince
1/4 glass olive oil
1.5 spoons tomato sauce
salt, pepper
1 carrot
1/3 glass rice

Take 3 mid-sized leeks, cut their stems, wash and cut them into slices of 0.5 cm thickness. Put 100 grams of mince into a pan, add 1/2 glass water and roast it until there is no water left. Add the leek with 1/4 glass of olive oil and cook it for 5-6 minutes at middle heat. Add 1.5 spoons of tomato sauce, salt, pepper, one sliced carrot and 3 glasses of water and cook it for 15 min. Add 1/3 glass of rice. Cook it for 30 min. It is ready! Leek tastes good with macaroni.


Arabic Tava (for 2 persons)


ingredients:

1 big onion
3 potatoes
1 tomato
some mydonese (dunno its English)
100 gr. mince
1 glass oil
1 spoons tomato sauce
salt, pepper

Cut the potatoes in the form of small cubes. Cut onion and tomato into small pieces. Mix all of the ingredients, add 1 glass water and cook it for half an hour at middle heat. That's it...Quick'n easy...


Tas Kebab (for 4 persons)


ingredients:

1/4 kg meat in small chunks
4 mid-size potatoes
1 big onion
1 big mushroom
2 chillies
1.5 spoons tomato sauce
salt, pepper
3 glasses of water

Put the meat into pressurized cooker with 3 glasses of water and a lil salt. Cook it for 20 minutes. Cut the onion, chillies, mushroom and potatoes in small cubes with potato cubes having larger size. Open the cooker (carefully of course). First put the onions, salt and tomato sauce and mix them nicely. Then put everything that you have into the cooker, close it and cook for another 10 minutes. After that it is ready. It is nice to have some pasta or rice to eat with it. bon apetite =)


Taze fasulye (for 2 persons) (english version coming soon...)

  1. fasulye (0.5 kg) alirken tanelerin irilesmemis (olgunlasmamis) olmasina dikkat et.
  2. fasulyelerin uclarini kes ve yika.
  3. fasulyeleri 2-3 cm'lik parcalar halinde kes.
  4. 100gr kusbasi eti sogan, salca, tuz ve biber katarak 5 dakika kavur.
  5. faulyeleri ekle ve 10 dakika kavur.
  6. dogranmis bir domates ve bir biber, iki bardak su ekle ve 20 dakika duduklude hasla.
