| Jamaica's History Facts Jamaica is one of the three islands in the Northern Caribbean forming the Greater Antilles. It's the largest English-speaking country in the Caribbean Sea, stretching 146 miles from east to west. Jamaica is well-placed on the world's major shipping and airline routes. Jamaica has one of the richest and most varied landscapes in the region. There are 14 parishes. Clarendon---Hanover---Kingston---Manchester Portland---St. Andrew---St. Ann---St. Catherine St. Elizabeth---St. James---St. Mary---St. Thomas Trelawny----Westmoreland Kingston is the capital and the largest city of Jamaica, and also a large commercial seaport. Jamaica gain its Independence on August 6, 1962 and its Imancipation from Slavery on August 1, 1834. The position of Jamaica as a dependency of Britain for more than 300 years is reflected in both language and customs, which are combined with African influences. Reggae, a distinctively syncopated style of Jamaican music, much of it highly political, was popularized in the 20th century by Bob Marley and many others singers. Christopher Columbus was said to discovered JA on his 2nd voyage on (May 5, 1494) {this from my internet source}. In school I was taught 1492. Yet, when he first set foot on what he described as "the fairest isle that eyes have beheld" the Island was already inhabited by the Arawak Indians the first ever set of people to live on the soil of "Jamaica" then called "Xaymaca" which is derived from an Arawak (aboriginal Indian) word meaning "land of wood and water." Therefore, how can u discovered something which was already Inhabited??? Black stands for hardships overcome and to be faced; Gold, for natural wealth and beauty of sunlight; and Green stands for hope and agricultural resources. |

| Ackee and Saltfish - Jamaica's National Dish INGREDIENTS : 1/2 lb. Saltfish (codfish) 1 dozen ackees 1 small onion 1 teaspoon black pepper 3 slices hot scotch bonnet pepper 1 small red sweet pepper cooking oil METHOD: Soak Saltfish in warm water to taste. After soaking saltfish (codfish), place it in cold water and boil. Clean the achee. Remove the seeds and all traces of interior red pit from the ackees. Wash ackees five times Cover and boil until moderately soft. Drain, cover, and put aside. Pick up(flake) the saltfish and remove all bones. Saut� thinly sliced onions and sweet pepper rings. Remove half of the fried onions and peppers Add saltfish and the ackees, and turn the fire/stove up slightly. Add black pepper Pour in to serving plate and garnish with remaining onions and pepper slice. ENJOY!!! |
