Ilish Macher Dhakai Paturi
(Dhaka Style Paturi of Hilsa Fish)

Ingredients: 

500 gms of Ilish ,cut into pieces and washed.
4 teaspoon of mustard Seeds, or mustard powder or prepared mustard.
3 or 4 green chillies.
1 tablespoon of turmeric powder.
salt , to taste.
Banana leaf to wrap the fish securely.

Procedure: 

If using mustard seeds, grind the seeds with the green chillies.If not,chop the green chillies finely.
Mix all ingredients together and rub the pieces of fish thoroughly with the mixture.
Wrap the pieces in banana leaves.
Heat a heavy bottom frypan and place the wrapped pieces on it.
Cook covered, on low heat, until (the leaf dries and shrinks) the fish is cooked through. 


Aluminium foil can replace the Banana leaves, though the taste and smell would be a bit different.
 Baking ovens could be used in last two steps above.In case of microwave do not use any wrapping.
Once wrapped very securely, the dish could be cooked inside hot freshly boiled rice.Remove half of the rice from the pot and put the wrapped pieces inside and top with the rest of the rice.Leave for 20-25 minutes.
I myself frequently substitute Ilish with Yellowtail Fish - use your own imagination and try whatever fish you feel like.
