CHICKEN MASALA
(Chicken grilled with *AJWAIN*)


Ingredients:

500 gram boneless Chicken,cut into small pieces (about2-3 cm cubes)
1 and 1/2 cup plain Yogurt
1 tablespoon Garlic paste
2 tablespoon Ginger paste
1 cup sliced Onion
2 teaspoon *JOAN*, powdered
3 pods of Cardamom.powdered
4-5 cm long Cinnamon stick,powdered
3 Green Chillies,or to taste,pasted or chopped
3-4 slices of Lemon
2 tablespoon Oil
Salt, to Taste 
A pinch of Nutmeg powder, (optional)
Slices of red, green,or yellow Pepper (for garnishing)

Procedure:

Soak the Chicken pieces in Yogurt for 1 and 1/2 to 2 hours. 
Heat oil in a frypan and fry the onion slices lightly. 
Add ginger and garlic paste and fry for 1-2 minutes. 
Add chicken and stir for a few minutes. 
Mix all powdered spices and Green Chilly with the chicken. 
Grill under low to medium heat, until the Chicken is done and the gravy almost dries up. 
Sprinkle lemon juice from top. 
Garnish with sliced Peppers and Lemon.Serve hot. 


Goes well with breads like *Paratha* or *ROOTI*.
Chicken could be substituted with Lamb or Mutton.Use Boneless
small pieces & soak for 3-4 hours in yogurt.

For those who don't know:
*AJWAIN* or *JOAN* are small seeds with a pungent taste and
Antacid property.They are sprinkled into Indian breads and savoury snacks made from flour or chickpea flour.
*NIMKI* is a savoury snack made with flour and deepfried.
*PARATHA* is flat ,fried bread.
*ROOTI* is flat,baked bread.
