ultimate double chocolate brownies
joyce fehr in the osler community church cookbook

INGREDIENTS

cocoa   3/4 cup
baking soda   1/2 tsp
butter   2/3 cup, melted and divided
boiling water   1/2 cup
sugar   2 cups
eggs   2
flour   1 1/3 cups
vanilla   1 tsp
pecans   1/2 cup, coarsely chopped
semi-sweet chocolate chunks   2 cups

METHOD

  • in a large bowl, combine cocoa and baking soda; blend in 1/3 cup melted butter

  • add boiling water, stir until blended

  • stir in eggs and sugar and remaining butter

  • add flour, vanilla and salt

  • stir in pecans and chocolate chunks

  • pour into a greased 13x9x2 baking pan

  • bake at 350 degrees for 35-40 minutes

NOTES

  • be careful not to overbake.  As a rule, brownies shouldn't test completely "done" when you get them out of the oven.  They should just be baked around the edges and slightly firm in the center

  • i did ice these once, but thought it made them too sweet.  They are sweet enough on their own!
