vanilla custard

ian's mom makes the most scrumptious pies. she uses this for the custard in her fresh fruit ones. it's so yummy
INGREDIENTS
| eggs | 4 | ||
| corn starch | 1/2 cup | ||
| milk | 6 cups | ||
| sugar | 1 cup | ||
| vanilla | 1 tsp | ||
| butter | 1/2 stick | ||
| salt | pinch |
METHOD
combine eggs, cornstarch and 1 cup of milk in a small bowl
whip briskly with a wire whisk
in a large pot, combine the milk, sugar and salt
stir occasionally and bring to a boil
add the eggs and cornstarch into the boiling mixture
keep burner on high and stir vigorously until the mixture thickens
take off heat
stir in the vanilla and butter
transfer the custard into a cool pan or container and refrigerate until thoroughly cooled (about 2 hours)
place in serving bowl or tarts and serve
NOTES
after it has cooled, pour into a cooked pie shell. top with fresh fruit and a glaze of your choosing.
1 recipe is enough custard for 2 10" pies
