On May 21st, some of the members of the Mustard Seed Library did one activity. That was to make a carrot cake. The members who were present were Anomita (Koel), Atreyee (Hia), Aparupa, Mini and Tania. Our main teacher was Belinda Ray, an American who lives here in Salt Lake, and Maura (whom you all know!).

We had fun making the carrot cake. Aparupa and Atreyee cleaned and grated the carrots (14 of them!), while Anomita and Mini helped with the combining of all the other ingredients. We were sure that the taste would be just right since there was a nice mess on the dining table and in the kitchen. After cleaning and grating all those carrots we mixed them with flour, sugar, baking soda, cinnamon, eggs, walnuts, oil, vanilla and water. After that we put the mixed batter in greased baking trays and baked the cakes for what seemed to be a loooooooooong time.

In fact, we all went home for lunch and came back to get our taste later in the day. We had a little coffee with our finished carrot cake and dreamed of opening a cafe for pujas this year!! We heard about the cake baking activity by visiting the Library to pick up books - so be sure to stop in and see what's going on every now and then.

If you'd like to try baking carrot cake at your house here's the easy recipe!
