Kuskusi "Bil-bosla"
Ingredients:
dried couscous
1 large spoon of oil
1 tea spoon of salt
1/2 cup water
4 large onions
2 spoons (medium) of butter
5 slices of Lamb meat (if not, beef will do)
1 cup garbanzo beans
2 potatoes
2 jalapenos
1/2 spoon chilli pepper
2 spoons tomato paste

The Sauce: Pour oil in a frying pan, add the slices of onions
then the meat. Cook it until the onions turn yellow.
Add the spices, tomato, beans and 1/2 a cup of water.
Cook for 2 hrs under low heat. Add some water as you are cooking if necessary.
Stir periodically. Cut the 4 large
onions in thin round slices and put them in a saucepan
under low heat. Cook them until they turn yellow.
Add butter and little salt, and chilli or pepper.
Leave it until it's done. Add the slices of
onions into the sauce and while the sauce is cooking,
add the Kuskusi and a spoon of oil and salt. Steam couscous until tender.
To serve, top with a portion of sauce.  Voila!

Mefroom
An appetizer or a side dish to the Kuskusi.
It is served on every special occasion, including holidays and Thursday nights.

Stuffing

* 1 pound ground beef
* 1 onion, grated
* 1 tablespoon parsley
* 4 garlic cloves, chopped fine
* 1/4 teaspoon salt
* 1/4 teaspoon pepper
* 1/8 teaspoon ground cinnamon

* 5 medium potatoes, peeled and sliced
* 2 teaspoons salt
* flour for dredging
* 2 eggs, beaten
* oil for deep-frying
* 2 large tomatoes, sliced
* 1 medium onion, sliced thinly
* 1 tablespoon tomato paste dissolved in 2 cups of water
1. Mix stuffing ingredients together and set aside.
2. Slice each potato lengthwise, cutting slices like sandwiches,
each two slices are not sliced all the way through. Each potato yields
about two or three "sandwiches". Use the potatoes that do not cut nicely
into slices for the Base.
3. Sprinkle all of the slices inside and out with the salt. Let stand for
5 minutes. Rinse off with water and dry on a towel.
4. Stuff the inside of each potato "sandwich" with about 1/4 cup of the
stuffing. Cup it in the palm of the hand to tighten it gently.
5. Roll each mafrum in the flour and then in the beaten eggs.
6. Heat the oil in frying pan, and fry the stuffed potatoes
over moderate heat for 5 minutes,
until both sides are lightly brown.

7. Put the tomato slices on the bottom of a lightly oiled pan.
Cover with the onion slices, and the potatoes that did not
make it into "sandwiches". Place the fried stuffed potatoes on top.
Add the water and tomato paste. Bring to a boil, then simmer,
covered, over low heat for 20 minutes. Serve warm.
Dibla (Sweets)

* 5 eggs
* 1 teaspoons baking soda
* 2 1/2 to 3 cups flour
* oil for deep-frying
* 2 cups sugar
* 1/4 teaspoon lemon juice
* 1/4 teaspoon orange-flower water
* 1/8 teaspoon vanilla extract

Now

1. Beat eggs; add the baking soda and 2 1/2 cups flour to prepare
a firm dough. If too sticky, add more flour. Sprinkle flour over
a board for rolling.
2. Separate dough into 5 pieces. Roll out each piece in paper-thin
strips.
3. Heat oil in deep frying pan.
4. Cut the large strips into 2-inch-wide strips about 12 inches long.
Start wrapping the strip around the prong of a wide 2-prong fork
while frying it. Keep rolling it onto itself as it fries.
When you have rolled it onto itself and it is light brown,
it finished frying.
5. Remove from oil and place in colander to drain.
6. Dip the dibla into the heated syrup all around,
drain in a colander.
7. Mix the sugar, lemon juice, orange-flower water and vanilla together
in a pan and just cover the mixture with water. Simmer the mixture
over low heat for about 45 minutes to thicken. Stir and remove the
syrup from the heat. Use immediately or set aside for later use.
8. Dip the dibla into the heated syrup all around, drain in a colander.
If the syrup becomes too thick, add 1 or 2 tablespoons warm water.
Spread the dibla on a platter. Enjoy!
Beans with Spinach (Lubya bel Selk)

* 2 bunches of fresh spinach (use only the leaves)
* olive oil
* cooked white beans (one palm full per person)
* 1 bunch of cilantro
* 6 green onions (use only the green part)
* 1 head of garlic
* two shakes of turmeric
* black pepper to taste
* salt to taste
* meat (1/4 lb. per person)
* water (just enough to cover all ingredients)

1. Wash spinach thoroughly, drain.
Saute in hot oil. After cooling, grind it in the processor.
2. Add:
Cilantro, washed, drained and chopped.
Green onions, cleaned and chopped.
Garlic, peeled.
Turmeric
Black pepper.
Salt.
Meat.
Beans, washed and drained.
Water to cover all ingredients.
3. Bring to a boil and let simmer about two hours depending
on the size of the beans.
