(My Friends Favorite Recipes)
Ingredients:

Large bag (30-32 oz) frozen Hash browns (shredded kind preferable)
1 can cream of mushroom soup
1 can cream of celery soup
1 can cream of chicken soup
1 pt. sour cream
1 large bag (2 cup-3 cup bag) of shredded cheddar cheese
1 large onion, chopped
4 cups plain Corn Flakes
1 � sticks of butter, melted
Salt, pepper and garlic powder to taste

Chop onion fine and set aside. Crush the corn flakes and set aside, they can be as fine or as rough as you like, but should be more broken than they come in the cereal. Put the frozen hash browns in a very large baking dish (larger than 9 x 13) with the salt, pepper and garlic powder and mix them in well. Then add the three soups, the sour cream, the cheese and the onion and mix well again right in the baking dish. Smooth over. Sprinkle the crushed corn flakes as evenly as possible over the top of the casserole. Then melt the 1 � stick of butter and drizzle it over the top of the corn flakes, up and down, get the casserole as even covered as possible again. There will be enough to soak all the corn flakes if you do it slowly. Bake at 375 degrees for 45 minutes. Easy to reheat in oven (or microwave as long as you use a glass pan).

5 lbs. of boiling potatoes, peeled and cut up in large chunks�SAVE THE POTATO WATER!
2 lb. hamburger *
2 large onions
Large jar of Prego Garden Style with Herbs spaghetti sauce
4 or 5 medium cloves of pressed garlic
fresh brussel sprouts, boiled until fork tender, the amount you use is up to you
� small bag of peeled, baby carrots or 2 cups, sliced very thick
3 or 4 medium yellow squash, peeled and sliced in large chunks (or you can use zucchini�or both)
2 cups fresh green beans, snapped in bite-sized pieces
Half of a large bunch of fresh celery, cut up chunky including the tender inner stalks and inner leaves
12-15 fresh tomatoes, chopped large or about 4 cans of diced tomatoes (optional to use more)
1 cupful (at least), chopped up, of red bell peppers or banana peppers
2 cans, drained, of baby peas (or snow peas or black-eyed peas or it�s optional to use all)
2 cans, drained, of niblets corn
2 cans, drained, of lima beans
2 cans, drained, of kidney beans
2 cans, drained, of Veg-all
Oregano to taste

Boil the potatoes, adding a little salt to the water, in a very large stockpot (say 16 quart). While they are boiling, brown the hamburger (a pound at a time if it�s easier) with as much of the onion as you can fit in there, chopped up coarsely. Don�t �chop up� the hamburger too fine, you need it in small clumps, but not so large it will not brown thoroughly. The rest of the onion will have to go in with the vegetables later. Salt and pepper the meat while browning. You can prepare the following vegetables ahead of time (even the night before): the sliced carrots, the peeled and sliced yellow squash and/or zucchini, the cut green beans, the chopped tomatoes, the peppers and go ahead and boil the brussel sprouts before adding. If you must cut the brussel sprouts, only cut the large ones and only in half. When the potatoes are fork tender, add the Prego sauce to them (keep the potato water in there as base of soup). Add the browned meat and onions and the pressed garlic, then add the fresh vegetable; brussel sprouts, squash, green beans, peppers, celery, carrots, tomatoes (if you have fresh) and whatever onion you couldn�t cook with the hamburger. Keep at medium and stir often so nothing will stick to the bottom of the pot. Now, add the canned vegetables: peas, corn, lima beans, kidney beans and veg-all (and tomatoes if you don�t have fresh). Add oregano and Mrs. Dash to taste. Keep on medium until the fresh vegetables are tender. It�s ready to eat�enjoy. Then, let it cool and separate it into freezer bags of individual portions.

*or 2 lbs. stew beef, cut in bite-sized pieces, browned in olive oil until it gets golden brown
Melvina is a friend who's like family (see Friends page) and this section would not be complete without her yummy potato casserole recipe which she has taken to many a church function and is welcomed at all our family get togethers.  She frequently makes an extra pan of it so she can send it over to her daughter's home at her son-in-law's request.
