Pure triple chocolate bliss
Who knew a wet sponge could taste so good?

This was a birthday cake for my sister's friend, Mike.  The lyrics on the cake are from the Bob Dylan song 'Forever Young', which were requested by his friend, Elaine.  I am still trying to perfect my cake writing, but as you can see, I'm not quite there yet. LOL  In any event, 3 layers of dark Belgian chocolate cake, filled and frosted with Belgian chocolate ganache..  Homemade chocolate modeling plastic bow, highlighted with edible gold dust, as are the chocolate modeling plastic strips around the cake.  White chocolate lyrics dusted with edible gold.  Ganache also used for top and bottom, tiny rosette borders.
Spongebob Squarepants for the birthday of my sister's BF's, niece.  1 layer chocolate sheet cake, shaped a little to 'Spongebob' proportions.  Tinted vanilla buttercream on top, chocolate buttercream for the shorts, mouth, outlines, and eyelashes.  Tinted fondant tongue, tie, sponge holes,  and birthday message.  Black licorice belt, frosted yodels for the upper arms and lower legs, and frosted breadsticks for the lower arms, legs and nose.  Two  chocolate cookies for the feet.  This was really fun to make.
My take on a Viennese like torte, using white chocolate.  An almond pastry crust, spread with raspberry preserves mixed with a little Framboise, and filled with a white chocolate, almond studded and scented custard.  This is topped off with a chopped butter almond-white chocolate chunk, crumb mixture, then baked. A melted white chocolate drizzle and a cherry, (I didn't have any fresh or frozen raspberries on hand), complete the torte.
This was a test cake for a chef pal, using some of his favorite flavors, and giving me a chance to play around with rolled buttercream drop flowers and leaves.  The 'Toby' on the cake is my cat, and he really is 2 in May,  so I filled in the empty space with a Happy Birthday to him :D.  The cake consists of two layers of Biscuit de Savoie, which is like a genoise (sponge), but without the butter.  Each layer is doused with a honey rum simple syrup, then filled and frosted with a very light and silky honey buttercream.

'The Frog' birthday cake for Franklin.  Two layers of coconut cake, filled with ginger infused lime curd, frosted with coconut-rum italian meringue buttercream, and decorated with banana lace tuiles (which the humidity turned 'chewy'..UGH,), and toasted coconut.  The Frog and make believe 'fly like' insects, with silver tinted wings, made with thinned tinted buttercream and fondant.
'Sawed off' Bass Guitar cake.  I call this 'sawed off' because I didn't have a cake board big enough to fit the whole neck and keys.  A semi-replica of the Birthday boy's Bass Guitar.  Two sheet layers of triple chocolate cake, sandwiched with raspberry-chocolate truffle filling.  Fondant, silver dragee guitar features (pots and pans etc..) dusted with edible silver, lemon licorice strings, also dusted with silver.  Frosted with black tinted chocolate ganache on one half, and vanilla buttercream on the other.  Light brown tinted vanilla buttercream for the 'sawed off' neck.

Luscious mountain of chocolate
This was a last minute order for the birthday of a bicycle enthusiast, so I had to make do with what I had on hand.  The bicycle is painted on the cake with thinned fondant and buttercream, the grass is  buttercream that I spiked up with a skewer, and the sky and rosettes are air brushed.  Two fondant clouds finish it off.  The cake is almond-marzipan, and the buttercream , Amaretto-Swiss meringue.  It's a tad sloppy, as I usually need more time to prepare for specialty cakes, and couldn't do what I wanted to do due to the time constraint.
Stem and leave textured chocolate covered  dome, topped with red tinted white chocolate roses.  Dome filled with layers of white genoise, raspberry jam mixed with Framboise, and creamy , dark Belgian chocolate mousse.
