You know, I'm all for covering a whole frosted cake with fondant, to get a nice, smooth surface to decorate on, but honestly, I prefer a silky buttercream, frosting or ganache, all by itself. I feel that fondant is somewhat of a road block to the true flavor and texture of a cake. I want people to bite into my cakes, and feel smooth, soft, and creamy, instantly. My cakes may not look as 'perfect' as most that you see, but they taste great! Having said all that, don't get me wrong, I would have no problem covering a cake with fondant if that was what was requested of me. |

Another angle of the fruit basket cake. Making marzipan fruits can be tedious, as you not only need to make the marzipan, but you need to get it to just the right consistency or it may not hold it's shape when set down to dry. Once the marzipan is made, and you're happy with the consistency, you need to shape and color each fruit, then brush them with food tints to shade and achieve the desired look of the particular fruit you're working on. Cloves make great stems, but eating them isn't something I'd recommend! Regardless, it's a lot of fun. |

'Basket of Fruit' cake. Four layers of almond paste laced white cake, each layer spread with raspberry preserves, and Amaretto butteream. Cake frosted with a thin layer of the Amaretto buttercream, then tinted light brown for the basket weave and ragged rope border around the sides and top of the cake. Homemade marzipan fruits fill the 'basket'. This one was made expressly for Susi, who loves anything 'nutty'. :) |

Peanut Butter Mousse tart. Homemade peanut butter cookie crust, spread with melted white chocolate, then filled with a luscious peanut butter mousse. Topped with a dark and milk chocolate ganache, and melted white chocolate 'globs. This was a rush job for a quick dessert, as I'd normally make a nicer, more complex, design on top. Still looks pretty tasty, though! |

Basic cookie box that I made for my sister to give as a small token of appreciation to someone. Cookies- Toffee almond, chocolate chip, white chocolate hearts, peanut butter balls dipped in milk and dark belgian chocolate, some sprinkled with gold, and melt-in-your-mouth, pecan crescents, dredged in powdered sugar. |

| This is a birthday cake for an irish guy (obviously), named Ronan, who loves Thin Lizzy (obviously..again..lol). 10-inch 3 layer rich, double chocolate cake, filled and decorated with a swiss meringue buttercream, flavored with vanilla, kirsch (cherry brandy), and Amaretto. Basket weave piping,, intertwined with gold, surrounds the cake, as does a shell border. Gold bow and bow curls made with homemade fondant, then painted with edible gold, flavored with a bit of orange and lemon. Green fondant shamrocks, dotted with gold, outline the birthday wish, and a belgian dark chocolate replica (which I created by copying their logo from an online site) of Thin Lizzy's logo, plus two musical clefs, finish it off. |

Decked out Boston Cream Pie. Two layers of white chocolate genoise, filled with a vanilla bean, white chocolate pastry cream. The whole cake was coated with a milk and dark Belgian chocolate glaze, then wrapped in a solid sheet of Belgian dark chocolate, which was then painted with edible gold designs. Homemade chocolate roses, of various sizes, and some pink and violet buttercream roses, top it off. These are NOT good photos, as I had to use a very old camera. |

Easter Bunny in a Basket, Cake. 2 layer Devil's Food cake, filled and frosted with a confectioner's sugar based, vanilla buttercream *this buttercream seems so 'Easter', to me*. Chocolate buttercream basket, filled with green tinted, pearl dusted, coconut 'grass', jelly beans, and my take on a goofy bunny, using fondant. Two small, blue, buttercream roses add to the festivities. Tinted fondant bunnies, chasing daisies, surround the cake |
