The program addresses the needs
of many different individuals. Each year, on average, 45-55 students
enroll in the program. The majority are women, both traditional undergraduates
and returning students with other degrees. Some enrollees plan to make
nutrition their future career while others come to find help in dealing
with special needs of their families.
The curriculum includes classes such as Therapeutic Nutrition, Experimental
Food Labs and an Advanced Menu Planning Lab. Davis confided that although
there are a variety of classes offered to students, she would like to
add more seminars on alternative medicine, including homeopathy. For
now, she said, "We started this year a counseling lab where students
can get face to face practice."
